Chicken Rub:
2 Tablespoons Celery Salt
6 Tablespoons Kosher Salt
12 Tablespoons Brown Sugar or
Turbinado Sugar
6 Tablespoons Ancho Chile
1 Tablespoons Black Pepper
2 Tablespoons Paprika
1/2 Tablespoons Onion Powder
1/2 Tablespoons Garlic Powder
1/2 tsp Ground Cumin
1 tsp Cayenne Pepper
Chicken Marinade:
Approximately 2 Tablespoons of Olive Oil
Approximately 2 teaspoons of Rice Vinegar

Family requests this all the time. The wife asks for me grill this often just so she can have it during the week on her lunch salads at work. It's great for bbq too, I just quickly glaze them towards the end 😋 to finish. It Also makes tasty drumsticks. I do 3-6 hrs in a pickle brine, rinse, dry rub, 30min marinade, then glaze wth a bbq sauce towards end to finish. One of my favorites is on grilled salmon, wife hates any recipes that use lemon so this is great alternative. I have to mix this rub in obscene amounts for use at home, camping, at the cabin. Guaranteed to impress your guests.

Tried this technique today, minus the vinegar as I didn't have any and using a commercial rub, and you weren't kidding. Absolutely delicious, juicy and with a lovely sear. This is my new mainstay for chicken, thanks for sharing!

Thank You! I had it prepped and then got rained out so I just did it in an air fryer at 400. Glazed at 155. Cooked to 165. Turned out awesome.

I have a new Big Joe, with no prior experience with ceramic grills other then the first 8 cooks over the past couple of weeks...all decent to good, but not the sort of results one hopes for from such an awesome beast of a grill. My wife essentially hates chicken breast. Years of corporate meetings with dried chicken breast served for lunch has left her with a strong anti-chicken bias. I tried this recipe (put the chicken on at 580 degrees, 2 min first side, 2.5 min the second) over direct heat. It was great and even my anti-chicken wife had to agree. Keep up the good work!

this is how I do chicken breasts and with that heat you'd think it would be dry, but it comes out so juicy. I pull mine at 150-155. Great video. thanks a bunch

Do you put the rub and marinade on both sides? If you cook on charcoal how long on both sides? I’m making this when I go camping
I do use the rub/marinade on both sides. adjust for thickness... go light if they are really thin. grill for 3 minutes a side if its covered charcoal. perhaps a little longer if needed. always trust a good meat thermometer and look for 160F and rest for a few minutes

they do. I cannot remember the brand... they are pretty generic... but I got them at this store www.hawgeyesbbq.com/about_us/ looks like they do not have them online, but they might have them at the store? I purchased them in person. They are on the short side, but I love them.

I make really good chicken breast but I never thought of slicing it in half... I am about to make chicken right now and I will try it
Looks so good. Can you taste the vinegar? And can I marinate it longer in the fridge?
You can marinate it longer in the fridge if needed. I have not done overnight with this, but several hours is fine. You do not taste the vinegar so much.... just a nice balance of sweet, salty, and tanginess.
Keegan, should I wait about 20 seconds or so after I put the first side of the chicken breast on the grill and close the lid to start the time?
I notice the temperature drops to about 425 or so when I open the grill to place the chicken.
I would experiment a bit. In the end, the finishing internal temperature depends on chicken breast thickness and time/temperature on the grill. Every grill is a little different.... but with a few experiments, you will dial in the right process for you and your grill.

I'm making chicken alfredo for my nephews graduation reception. Could I just use the olive oil with salt, pepper, garlic salt & onion powder instead? Do you think it would still be as juicy? I also plan to marinate the chicken breast for at least 24 hours. I'm not sure how it will turn out, my chicken always dries out on the grill. I'm a bit nervous, just because I'll be making the dish for over 25+ visitors.
So, I think the most important part is cutting the chicken into consistent thicknesses, so it cooks evenly and fast. The 2nd most important is the seasoning and olive oil / rice vinegar marinade. If you are going to marinade over night, I would probably agree on not adding the rice vinegar. Then just go hot and fast on the grill. if you are worried about results, make a small little sample batch. good luck!
I have been looking for tips on how to grill chicken where it isn't dry but at the same time I don't want to bite into it and feel like I am biting fiberous tissue, If that makes sense? it’s great for salads too... we often make more than we need just so we have extra for the week

The chicken is juicy and completely cooked through and texture is on point as well which is saying something because being as picky as I am with ANY meat! I was looking to see if anyone else thought 12 T brown sugar was too much. I guess not since no comments on it, but I ended up reading all the comments and learned about not washing chicken. I honestly never knew that (I'm still in the Julia Child time zone, ha!)! But Keegan's advice is well taken about removing the slime. Thanks for a great video. Trying it tonight.
people really get scared about rinsing chicken it turns out... I still do it though. 12 T of sugar sounds high, but there is a lot of salt in the rub too.... so its more of sweet & salty combo that works well. If you were do divide everything by 4 for a smaller batch, it would seem less scary. this make a lot, as I use it a bunch. make a few batches a year for the house. Thanks for watching

Yes, the ancho chile is a powder. I get mine from penzeys.com The Rice Vinegar is nice to use... on the lighter side. You could give a squeeze of lemon over the top or use a touch of another type of vinegar you have on hand. I would stock the rice vinegar though....it works well.
Is this using chicken breast with rib meat or the 99% fat free without rib meat? Which one do you think is less dry?
Would this basically be the same on your Weber charcoal grill?
yes... directly over hot coals for 2-3 minutes a side, then check internal temp... finish away from the coals if for a few minutes if they are looking to "toasty" at some point.
@@Searedandsmoked What temp do you cook them at like on a Weber charcoal? Both vents are wide open and my temp gets up to 550 to 600F. I don't know if the temp monitor is that accurate or not though. It's located near the top of my Weber lid.

Wow. I have always been afraid of grilling chicken. This was excellent. While I was preparing the rub, my wife looked at it and asked if she should have the pizza place on speed dial in case it doesn’t turn out good. So i made two batches one with your rub and one with a taco seasoning that I know they like. Guess what: they ate all of the ones made with the new rub and I got stuck with the bland taco rub!!!
I loved your recipe; however, what would you do to make it less sweet? I mean 12 tbsp of brown sugar will make it inevitably sweet. Just was curious about your opinion.

Nice... always good to get a win with the family! You do not need to use all the brown sugar if you do not want to. I just keep in mind the balance of the rub when seasoning. Basically... less sugar means a higher concentration of salt, so use a little less seasoning to avoid being too salty. Glad to hear it turned out tasty! ... thanks for watching!
Not to sound stupid but is gas grill the same as propane grill? Cuz your grill looks like mine but don’t think mine is Weber
sure thing... some might be natural gas, but just the same as propane.
How long does it take to get to 550? I have the same grill but haven't gotten it that hot.... maybe I just need to wait longer...
For the weber gas grills, I usually pre heat for about 30 minutes to make sure its nice and hot. If it does not get that high, still give it a try after you know its reached close to max temperature.
Or you can add green papaya paste to the marinade 1 he before baking.
