I need exactly 4 players to hold a sporting event on Friday. The form should have 4 editable name fields. On Monday, I start out with 0 players. If Player1 registers on Monday and Player2 registers on Tuesday, will the form automatically update so that someone clicking the link on Wednesday will see that there are 2 player names (e.g. John and Joe) and he can add his name as the third player?

Besides using Google form, there are Google add-ons for sign-up, such as "One link sign-up".

No, it won't do this using basic Google Form functionality.
Not on basic Google form but is available on Google sheet add-on called One link sign-up.

Open it in Sheets and select File > Download As > Excel .xlsx or csv
How do I place 'First Name' and 'Last Name' on the same line or side by side?
You can ask them to type a full name in a single field, or have separate fields on top of each other. Can't place them side by side.
