    Totally agree with Nate. My first thought was send her “A” PS like the professor wants. No harm done. It just won’t be the real PS.

    It sounds like this Professor is used to writing letters of rec for students going to graduate school (most likely PhD) in which one would reference classes and professors you are interested in studying under at each university you are applying. I think your advice was good, write the (fake) statement to help the professor craft her letter BUT also instruct her that applying to Law Schools is different and mention why and how that would impact what she writes.
