Breakfast should be the largest meal and If you watch the breakfast one you'll hear them say the riders eat 2 portions of the oats AND an omelette, which is quite a bit of food. Also, the vegetable juices and smoothies give them the carbs and nutrients they need and are easily digestible.
even if you're not professional and do a 180km ride, if you don't eat anything substantial at ~100 km, you will break at 150 km because your system has depleted it's carbohydrate storage (no matter how much you eat before)
you will do better if you wait for you food to digest first. Digestion takes energy and blood flow and either your digestion is suffering or your legs are suffering.
i agree with what you say but are you a grand tour rider who weighs 7-8 stone? they prob suck on close to 30 gels a day, if not more... im saying this only while there on a grand tour, not every day.
Yes, but they are burning 5,000+ Calories every day for three weeks, in order to stay healthy and get enough nutrients they surely eat more than this, I lost 20 pounds eating more than this and I don't cycle near as much.

they eat alot of bars and gels while riding. they dont eat huge portions before a race, because they'll feel bloated

Everyone should have a ricemaker. Makes a HUGE difference in the taste compared to rice prepared in an open pot.
Yes they eat all the energy gels and bars for energy and eat sandwiches, buns and ricecakes for hunger.
