Dine in the 419: Colleen's Christmas Quiche

- TOLEDO, Ohio (WTVG) -- Merry Christmas, everyone! Get ready to take some notes from my wife on this special home cookin' edition of Dine in the 419.
So many restaurants are closed for Christmas, giving their staff members the day to spend time with family and loved ones, we thought we would do the same.
Colleen Geftos is going to show us how she makes what's become a tradition at our house, Colleen's Christmas Quiche!
Crust:
-May use store-bought or make your own
1 1/2 c. flour
1/2 c. cold, unsalted butter
-Add tablespoons of cold water as you mix
-Roll out, form to pie pan
-Bake at 400 degrees apx. 10 minutes to preheat crust
-Allow to cool
Quiche:
1/2 c chopped onion
1/2 c. butter
-Sauté
-Add apx 1/4 c - 1/2 c flour until Roux is on thicker side
-Then add apx 1/2 c - 3/4 c cream, whisking quickly to combine
-Cool the Roux
5-7 eggs
1 c. sour cream or Greek yogurt
add your seasoning (pepper, fresh herbs, etc.)
-Beat until well combined
-Add cooled Roux
-Add mix-ins; for example ham & cheese, sausage, peppers, mushrooms, spinach, etc
Preheat over 350 degrees
Bake apx (45) minutes
Allow to cool and set up before slicing
