  • Smoked Blacktip Shark Dip - Plus My Smoking Setup.
    With the leftover Blacktip Shark Steaks from yesterday, I made some smoked fish dip. The preparation was the same as my other smoked fish dip methods as I first brined them in a dry mixture of five parts brown sugar to one part kosher salt. After brineing over night, I gave them a good wash down and then laid them out on a wire rack to dry for a couple of hours. Then it was on to my Brinkmann Smoker for a smoke over some smoldering cherry wood chips. After cooling, I shredded them with a fork and added them to my dip mixture.
    Dip mix:
    Whipped cream cheese
    Sour Cream
    Mayo
    Mixed diced vegetables (primarily garlic, onion, celery.peppers)
    Hot sauce
    Paprika
    Lipton Onion Soup Mix
    Black Pepper
    Lemon
    All ingredients to taste and consistency of dip preferred.
    Serve on crackers or bread.

    Well yes, you got it right here. I liked the way you handled and smoked the shark. The dip looks quite tasty. I would serve with lemon wedges and capers.

    Excellent recipe. I have smoked salmon quite a bit, but have never tried shark or shark dip.

    I've been debating keeping a shark for a few years now and after watching your last two videos I'll be pulling the trigger on that next time. I love smack and I bet shark lends itself well. Nice job! Looks fantastic!

      It's a nice solid piece of meat. Just make sure you clean it really quickly and get it on ice.

    Another great video! Steve, instead of using lighter fluid get yourself a Chimney. They are about $12-$14 and are actually easier to use, take about the same amount of time for the coals and will save money. I bought my Chimney about 5 years ago and it's still good to go, just needs paper for starter. I would have probably spent $40 or more on lighter fluid versus $12 and don't have to be bothered with lighter fluid smells, tastes and not knowing what gases are permeating your meat.

      My chimneys never last me more than 2 seasons but its still worth it to keep that charcoal starter flavor away from my food.

      Yea, it came out great. Nice and flaky. Good stuff. Usually do the mackerals or amberjacks because they are oily but the Shark came out great. Not dry at all. I just didn't smoke for a long.

      Marathon. The bridges or head out to the humps. Permit, Bonefish on the flats. It's an island so you are surrounded by fish.

      I think it does better with firmer meat fish, so I would think Garfish would be good.

      Going to be doing a Jack soon, probably not smoked though. Amberjacks on the other hand is the way to go.

    If you don't soak your wood chips and you just put them in dry, meat/fish will have a sweeter smokey taste. I like using oak.

    The best woods for smoking fish are #1 mangrove and #2 Florida swamp titi. They want bitter your fish from over smoking.

      No, the Lemons we have are pretty big and the Bonnet pretty small. Blacktips are perfect size.

    If use vegetable oil on news paper or paper towels to get your charcoal going you don't need charcoal lighter.

    Love your channel, but please say no to lighter fluid. It doesn't burn off,and can easily contaminate your pit. Try the weber cubes and a chimney.

      Key West Kayak Fishing I didn't even comment on the Brinkman, and no, Weber didn't tell me say that. A wsm blows that pos away. I personally use a couple paper towels in a bit of cooking oil to light the chimney.. Your fishing skills are superb. I learn a lot.

    dam i didnt know that about sharks ,when i lived in ft myers i caught the heck out of them and didnt clean them till i got home , i ate them and didnt realy have a bad smell or taste , but i know better for next time . thanks

      You can probably buy some time if you are icing them down quickly, but best to do the total prep thing to make sure.

    Steve, Shark and Fried Bake. It's a Trini thing... not a fan of keeping / killing sharks due to the fining that trawlers have been doing locally. Our shark population has decreased significantly.

      Yea, we don't have a Shark issue down here. There is actually no limit on most of our Sharks. Very healthy population.
