Normally Disney singers that leave tend to ignore that period of their life happened, but Dove is literally enjoying every second of this! Disney made her a household name and this is like her way of showing her appreciation to them.

How come i only saw this now. Seeing her from liv and maddie gen up until now is insane. Her singing better in stereo at this moment is incredible. She has come a log way, and I'm so inspired to be like her when I start my career.

Girls' voices get deeper in their late teens early 20s so that could be it; and maybe changing her singing style and sound a bit to differentiate from her Disney sound.
She talked about how hard it was to step away from the sound that Disney put on her (I mean, just thinking of Disney songs - it’s always seem to be the same vocal style for everyone), so it might be a part of it
Ugh I wish I could’ve been her sound tech person. Her mic is so low you can barely hear her amazing vocals. This Venue seems small and it was probably best to not have an entire drum kit mic set.

In the show, her voice matured drastically compared to the first season to the second one. Which is completely normal tho, she got older.
