Some tips I learned from working in a local deli. You should fold the deli meat as you put it on the sandwich. This gives you extra layers of deli meat in each bite and creates air pockets. The air pockets between the layers increases the surface area of the deli meat as you eat the sandwich.
I made this sandwich and it was a hit. I played around with the sauces too and made a dijonaise instead (mayo and Dijon) it was absolutely delicious. The pickled onions were delish and my hubby approved. 😍 I also bought your book recently and cannot wait to start making delicious recipes. I try to avoid salt due to this fear I have despite having good health. Also, I do naturally love the flavors of produce as is. But it is so true that sometimes salt is necessary to bring out some cool flavors in something (i.e. the tomatoes in a sandwich). This was a good reminder! Thank you! ❤

It really DOES make them taste better. I think maybe it has to do with the amount of surface that hits the tongue, but I don't know. All I know is it increases the yumminess by by orders of magnitude! Munch on!

Remember to ALWAYS season your tomatoes. At least put salt on them, it draws out some of the flavour and acidity and just tastes better.
