    Hi Van Vu!! Your channel is fantastic, and I am so proud to have someone such as yourself to represent our culture! Although the French influence on the Vietnamese culinary tradition has been discussed extensively, we never hear of how Vietnam had rescued a French cultural heritage out of oblivion in the 1950s - la cuisine Provençale!
    Provençale cuisine was a derivative of Roman cuisine in the French Mediterranean. Just like the Roman garum or modern Italian colatura di alici, Provençale cooking uses pissalat - a fish sauce made from salted anchovy. After World War II, the production of pissalat came to a grinding halt, and the ingredient almost became extinct. This was important because it was a traditional ingredient in the pissaladière, an onion and anchovy pizza specialty of Nice, the capital of the Côte d'Azur.
    During the early 1950s after the decisive Chiến dịch Điện Biên Phủ, many Vietnamese resettled in France, especially around Marseille - the traditional Mediterranean port of entry from Indochine to France. Guess what these Vietnamese brought over that virtually rescued la cuisine Provençale? Nước mắm! Yes! We saved a French culinary heritage from extinction!
    The French news magazine L’Express featured an article about a decade ago on “Le nuoc mam, sauce de poisson miracle du Vietnam.”
    Even in French cookbooks or blogs on how to make pissaladière, nước mắm or mắm nêm were recommended as substitutes as these were “ironically easier to find than the authentic pissalat.”
    “…Vous pouvez aussi utiliser des produits asiatiques, comme le mắm nêm des vietnamiens, le plus approchant à ma connaissance, ou pourquoi pas, un nước mắm concentré, deux produits paradoxalement plus faciles à trouver que de l'authentique pissalat…”
    Hi Will, I also subscribe to your quite amusing channel. You had indicated in the video that there is no snail soup in France. Par hasard, je suis tombé sur une spécialité charentaise - la soupe d'escargots aux orties sauvages, essentiellement une soupe aromatique - voire homéopathique et médicinale - avec des orties sauvages, des tomates concassées, de l'ail et des escargots, avec un peu de beurre et de la graisse de canard. Miam…à votre santé!

    Thực ra người Việt đã chế biến các món ăn từ ốc từ hàng nghìn năm trước rồi, trước cả khi Pháp vào Việt Nam. Nên là cũng không phải việc ăn ốc là ảnh hưởng từ Pháp. Mà Mình thấy bên tây họ có món mì ốc sên và có cả súp với ốc nữa mà nhỉ , chắc không phải món Pháp à??

      chuẩn bún ốc là của việt nam và nấu bằng óc bưu hay còn gọi là ốc nhồi chứ không phải ốc sên

      Có thể là người Pháp qua VN, thấy người Việt ăn ốc rồi copy mình đó thôi, chứ ốc khó nuôi ở Pháp vì thời tiết lạnh và không có nhiều loại ốc như ở Việt Nam.

    Un cafe serre is my go-to choice when I lived in Paris. I drink it everytime after lunch. :D Now I'm back home in Thaland, I order Nespresso Machine and capsules to have un cafe serre. Kindda addict to small and strong cafe like that.
    13:38 In Thai we eat it with cháo gạo. Or take it as snack to eat with Thai milk tea in the morning. Just knew that VN eat it with Pho. Good choice (y)

    In a tropical country like Vietnam and many others, at a time when few people had a refrigerator, condensed milk allowed a longer shelf life and also when the can was opened. For example, in the West Indies, until the 1970s, condensed milk was much more widespread than fresh milk.

    I gotta clear this up. Tendon is different than fat.
    Tendon content mostly gelatin which is the same substance in Jello which is good for your body joints.
    it looks similar to fat but not the same. there's a reason why majority of asian are skinny.

    My mom cooks Beef stew Phở (Phở sốt vang) just perfectly and delicious, and she uses real red wine. Phở sốt vang really taste excellent when you manage to home cook it because high-quality ingredient lift it up :> I guess they don't use red wine for Phở Sốt Vang version on the street because it might be expensive. But the beef broth with five-spice n tomatoes already gives its signature flavor.

    Flan is mainly from Spain. It originated in Ancient Rome and eventually became a Spanish dessert. It also spread to other countries in Europe, but definitely big in Spain and Latin American Countries.

    This is ridiculous. Putting Pho and Bun Oc as French influence dishes are just wrong and ignorant. Pho was invented and being eaten by Vietnamese way before French colonialism area. Even Wikipedia stated that Villagers from Van Cu Village have been making this dish since forever.
    Escargots have been used in Viet cuisine across the country since thouands of year. Though it isn't known when this dish was first created, it is certainly one of the most typical dishes of Vietnamese cuisine. It's speculated to have come from a certain countryside, then followed the footsteps of immigrants to Thang Long citadel and became a specialty there. Even China has something similar called Luosifen.
    I usually like your videos, but this is not a good one. I give the French credit for the banh mi, but not for Pho and Bun Oc. Please get more information, and learn more about our history before making this kind of assumptions in videos. You are giving non Vietnamese people misinformation about our own culture. That's not good.

      Agree with the escargot, but I think she did not include Pho as a whole as a French-influenced Vietnamese dish, rather the specific phở sốt vang one. While the noodles are clearly native, the broth of this dish is definitely of French origin, with some Vietnamese twists.

      @@cuongpham6218 i see. I would prefer her to just introduce "Bo sốt vang" since Vietnamese beef stew does have French influence. The similar dish in the south is "Bo Kho". We Viet eat this dish with bread or other carbs like Hu tieu for the south, or Pho for the North. The carbs is not the French part, the stew meat part is. Therefore, Introduce Pho sot vang can be a bit misleading.
      All I am saying is, creating this kind of content needs more attention to historical details. Foreigners when they heard Pho Sot Vang, all they hear would be the "Pho" part and not the "Sot vang", so they will assume Pho is a French influence dish.

      @@harrysacto agreed. I used to like her materials, but lately, she has becoming more ignorant and starting to look like a sellout. She is trying so hard to target the expats audience, which most them look down on Vietnamese culture when they travel to Vietnam.
      I understand the notion of reaching out to foreigners, but you need to be authentic and be proud of your own heritage. Otherwise, foreigners (mostly white expats) will forever look down on Asian culture. They will always think that they invented Asian Culture with their colonialism mentality

I speak a little French, and I speak a little Vietnamese..., so this video was a little more ( fun ) for me... * All three languages were in this video (e.g., American English, French and Vietnamese.) The ( rainy season ) in Vietnam gave the video another taste of adventure to the video... I have Vietnamese and French ( cookbooks ), and I looked up each dish and learned a little more about French and Vietnamese food dishes... * Anthony Bourdain would be proud and proud of your video...     I’d like to make a correction: snails aren’t a French influence. Other southeast Asian cultures such as thai, Malay, Indonesian, and Filipino all have snails as part of their national cuisines despite no link to France and French colonization. The Vietnamese had been eating snails for a long time before French presence. It’s a coincidence, especially considering how different it is (as Will explained). The only similarity is the snail itself. It’s like saying gà hấp múi (Vietnamese boiled chicken) is an influence of coq au vin (French chicken strew) just because it’s the same meat. Cool vid though!

    Banh mi is less dense and fluffier than baguette, because of the rice flour. Vietnamese flan is a lot lighter and fresher than other flans.

    J'ouvre encore une parenthèse , pour la longueur d'un bánh mì Viet et une baguette française , c'est que quand j'étais petite fille et jeune fille après , on avait aussi des bánh mì ba ghết ( baguette ) à peu près comme une baguette en France , mais on en voit plus maintenant ; peut- être les gens préfèrent les petit bánh mì ? Le ba tê ( pâté ) ça vient carrément du pâté français avec foie et graisse de porc 🤩😍Je vous aime tous les deux .

    Sốt Vang actually stemmed from French Sauce Vin.
    Vietnamese call wine as "rượu Vang" (vin). In my family (I was born & grew up in Ho Chi Minh city proudly to the Hanoian parents) we say "Màu đỏ bordaux" for dark red colour (of red wine)
    My lens, Vietnamese Phở is rather influenced by Chinese hủ tiếu, mì that exist thousands yrs ago. However, since people around the word have a penchant for French name in their menu especially in a classy fine dinning restaurant). Phở might stemmed from French "Feu" = Fire, short form of Pot au Feu (Pot on Fire or Hot Pot) just to sound like French dish to entice customers.
    Similarly Bánh Mỳ Trứng Ốp La is simply bread & eggs on hot plate (Au Plat = Ốp La) or Cái Thìa (in my family we call Cù Dìa which stemmed from French "cuillère" = spoon
    As a child I usually went to Restaurant Chí Tài (Q.1, HCM.c) once a wk. There was a dish named "Assiette d'Anglais". I found it weird & asked dad why call Enghis dish with French name. Dad said: Posh & erudite Vietnamese prefer to parle français when order in restaurants. To some extent, English & American also prefer to list French in their English menu. BTW, "Assiette d'Anglais" (Vietnamese French) is an English Breakfast or basically a "Bacon & Egg" dish (may have some peas & sausage).
    My dad dubs Julia Robert as a "la vache qui rit" (laughing cow) I asked her: "you don't like her mouth ?"
    "I do" he said, "comme un fromage La Vache Qui Rit that one can't resist & wish to have a bite on it"
    Nowadays, in Viet diasporas dotting the US, Canada & Australia most of Vietnamese grocery stores offer fromage La Vache Qui Rit & my dad still drink coffee with a hint of beurre Bretel.
