about the cleaning part at the end - after the steak and asparagus are finished cooking, the pan looks dirty but it actually contains the necessary "bits" to do a pan sauce with mushroom/onions. don't waste last bit of the steak flavors! If you use the pan to finish with the sauce, because it was liquid, the pan would be very easily to clean. And really, you don't have to clean the pan to brand new condition. Signs of wear is very normal and also it proves to ppl that you actually use them! so don't get obssessed with cleaning

厚pan, 可以存較多熱能, 放左啲食材可以一路維持個温度
薄pan, 可以儲既熱能少, 一放塊扒, 個pan就凍左, 塊扒煎唔香
開火快升温, 係因為個pan 薄, 所以好易燒熱,但未必係好事
一放啲食材,就去唔到煎扒需要個温度
薄pan有佢既好處, 但煎扒真係要用厚pan

每次用完都有用食油去保護,入廚二十多年第一次遇見!!😢
你好!孔蝕是鐵鍋初期有機會出現的情況。如使用了一個月,油膜應未完全養成。假如這時候的鐵鍋有長時間的浸泡/鹽分接觸/洗潔精/強力磨擦,鐵鍋表面的鐵質會被釋放,造成孔蝕。因此用鑊的初期要多加留意,養好油膜哦!而且,養得愈厚的油份會更能填補孔蝕失去了的鐵分子,防止它繼續發生。😉

如果又想煎又想炒,建議你用深型煎鍋😉
我哋都有試過鐵鑊用電磁爐,如果開高度數都會熄,最緊要保持爐具喺中小火至中火狀態,並喺炒肉時不時離一離鑊😗
黐底方面,因為鐵鑊要先養好油膜保護層先會唔變成不沾鍋,所以開頭用要落多少少油俾鐵鑊吸收多啲油份先呀❣

你好,電磁爐可以用呀!不過記得電磁爐與明火不同,明火燒起上來鍋身也會加熱。反而電磁爐是單一底部熱源,要慢慢傳熱上鍋身,因此要注意鍋底中心點會否過熱噢!如果看見冒煙,就代表足夠熱了,要稍微關小一點或移動少少鍋的中心點噢!😄😄

電磁爐的話,就要長期開住細火,然後用筷子/食物夾夾住沾滿油嘅廚紙,不停向鍋側塗抹喇!

買左個鐵鑊, 個底唔平, 放係電磁爐上面, 個底有一半接觸唔到發熱圈
因為Summit的鍋具是日本工匠以人手逐個逐個打模及放入機壓,因此不能像機械生產鑝般有100%平面的精密機壓。
加上槌目的鐵鍋比一般鐵鍋及易潔鍋的不鏽鋼底盤更薄,打模時壓力太大亦不能避免有微量彎面的情況出現😳
但只要底部能跟電磁爐接觸,因為電磁爐熱源極為集中,亦會極快傳熱到整個鍋身的☺
