The bottom of my mixing glass cracked last time I filled it with ice. I've been using it for about 4 months. It wasn't a top quality product (Olympia glassware) but the bottom seemed to be very thick. The bottom was like cut off from the rest of the glass 😅 Do you think it is some kind of reaction when a glass meets ice, or I should always look for some better glassware?
@@TrufflesOnTheRocks I never put it into a dishwasher. Always cleaned in the sink. Now I bought Spiegelau's mixing glass. They say it's made crystal. I will see for how long it will last.

The lazy Manhattan is the goto when I want one. So easy and delicious. First sip is stiff and relaxes over time. I have the smoke top and will try the pro soon. Sounds fantastic

@@TrufflesOnTheRocks Often you have super cooler super slow motion parts. Like the falling smoke on the Manhattan. The must to be more than 60fps or I am wrong?
Can be quite long depending on the quantity. That's why I usually prep them before hand and store it in the fridge. Since it's shelf stable it's not a problem. But to answer your question, usually a few hours.

It’s a good question. I don’t know exactly. All I know is you need enough to drop the ph of the milk. How much does it need to drop to start clarifying? I don’t know ... yet 😉
While making that last drink, I think he used seven different glasses and it was making me a little crazy watching him pour the drink from one glass into another.
Some quick web-searching purports milk will curdle at around pH 4.1 -- I'm similarly intrigued that the cocktail was in that range without the citric acid. Also, could you just use liquid whey (e.g. as your diluent or even frozen into cubes for stirring) to get that clarified mouthfeel without having to actually clarify and strip out some of the color/flavor? (I have some left over from making yogurt.)

I made it with mozzarella whey in a gin sour ounce. I used it instead of egg white and it was fantastic. It doesn't have the same emulsification capacity than the egg white but the mouthfeel was amazing! Cheers!

doesn't milk clarification require citrus to curdle the proteins in milk?
Well as I said, the acidity of the Vermouth was enough to change the ph of the milk and it worked without the citrus
