Hearty Italian Pot Roast Stracotto
Ingredients:
3 lbs chuck roast
Salt and pepper to taste
2 tablespoons olive oil
1 onion, chopped
4 cloves garlic, minced
1 carrot, chopped
1 celery stalk, chopped
1 cup red wine
1 (28 ounce) can crushed tomatoes
1 tablespoon tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1 bay leaf
½ cup beef broth
Fresh parsley, chopped for garnish
Grated Parmesan cheese, for serving
Directions:
Prepare the Meat:
Season the chuck roast generously with salt and pepper.
In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Add the roast and sear on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.
Cook the Vegetables:
In the same pot, add onion, garlic, carrot, and celery. Cook over medium heat until the vegetables are softened, about 5-7 minutes.
Deglaze and Simmer:
Pour in red wine, scraping up any browned bits from the bottom of the pot. Allow the wine to reduce by half.
Stir in crushed tomatoes, tomato paste, oregano, basil, and bay leaf. Return the roast to the pot.
Slow Cook:
Add beef broth to the pot. Bring the mixture to a simmer, then cover and reduce heat to low. Cook for 3-4 hours, or until the roast is very tender.
Serve:
Remove the bay leaf. Shred the meat gently with two forks, mixing it into the sauce.
Serve hot, garnished with fresh parsley and grated Parmesan cheese. Ideal with polenta, mashed potatoes, or crusty bread.
