My three year old granddaughter loves to watch your shows! She thinks you’re “our friend Gaz”, who makes beautiful food. And has fun with chickens. We were scrolling through you tube and she literally yelled, “look Grammy! It’s our friend Gaz! Let’s watch that”. Then we’re watching the pickle section and she yells, “ seeds! I love seeds!” And later, “ those tomatoes look very tasty.” She is your biggest little fan. Keep up the multi generation content my friend. You’re turning a little one into a veggie eater. Plus she loves it when you play with the chickens.
Remember to "burp" your jars when lactofermentimg or they can explode with the built up gasses. You can also just use a rubber band instead of the metal clasp so that if air builds up, it can get out. Store on a cookie sheet to protect from leakage

My Polish mom covers her cucumber pickles with a leaf of horseradish. This way, she can skip adding weights to jars. If any mold forms, it forms on the leaf, which can be discarded. She also adds a leaf from a cherry tree. Her pickles are absolute best ❤ I'm fermenting Sugar Rush Peach peppers with Rain forest chillies atm. I'm excited to see the results! I would love to see how you make your fermented hot sauce!!🤓
The horseradish leave and cherry leaf help keep the cukes crisp. Currant,grape,and in in a pinch pin oak work as well.many put them in the bottom of the jar but next time I’m going to try your moms way

As a polish person, fermenting cucumbers with family ever since I can remember, I would recommend fermenting the kind that is a lot smaller then those in the video. They have a lot more taste after fermenting and fit a lot better into regular-sized jars :D

Just a minor suggestion - we generally use the smallest, crispy cucumbers that we can find. We don't use any weights, we simply tuck them very tightly together. And once you bite into them, they are supposed to be crispy, not soft. In case of big cucumbers, we slice them and make a sort of a salad in a jar. But the best pickled cucumbers, are always small cucumbers. We also add grape leaves inside, apart from garlic and mustard seeds for the flavour :)
@@gazoakleychef in Hungary we go for this big ones when it comes to fermenting. We pickle the small ones, but for fermenting we love the big ones. Only difference is, we cut them in the middle 2-3 times lenghtwise to absorb the flavour better! You can encourage the fermentation process if you put a slice of sourdough bread on the top , it helps a lot when the wheather is not that nice.

It is fun to watch your garden and cooking transformations. i have been canning, dehydrating, pickling and lacto-fermenting garden goods for well over 50 years. Salad greens dehydrate beautifully! Just pull out the hard center stem, because that becomes super hard & tough. Then lightly heap on trays, do not lay flat or you will never get them off the tray! Dry slowly on low heat to retain the garden farm aroma and coloring of salad greens. Lacto-fermented lemons are incredible as is, in drinks or roasted. Try a spoonful of the lemon nectar & a few lemon slices squeezed in a glass of too sweet homemade herbal wine. Perfect match! Dried tomato slices can be seasoned in so many ways, for snacks. Mexican, Italian, Asian, or just plain. My neighbor is addicted to dehydrated onions. Lacto-fermented or dehydrated veggies and fruits are the best snacks ever. My favorite is dehydrated watermelon. They stay sticky so sometimes need to be put back in dryer. So sweet! My gardening tip is to plant tall sunflowers on the south/sun side of each bed, and add kale to each bed. Sunflowers will give plenty of shade to the garden greens. Aphids love sunflowers and kale, so all the other plants, including the beet greens, lettuce and swiss chard will be left completely alone. Naturally, each bed should have assorted herbs because bugs don't like the scents, and the flowers bring pollinators. Nice videos, yes please on the hot sauce. Fermented as well as canned. My ukrainian grandma used to add in the brine for cucumbers a horseradish root, black currant leaves, dill and of course lots and lots of garlic. It takes time to develop a good profound flavor but when it’s done I basically want to cry when I eat it. It’s been a while I’m abroad and this taste is something I miss so much. Vegetable fermentation is a core of Ukrainian cuisine, we do also whole tomatoes similar to cucumbers. I recommend you to try to make lecho - bell peppers with tomatoes (not fermented but cooked and jared), absolutely addictive.
@@gazoakleychefyou can also use gooseberry/currant leaves…many traditions depending on region and where you live that’s the beauty. Also I’d recommend adding some horse radish leaves if you are growing some or can find them…it can elevate the flavour. This goes for tomato’s and cucumber. You can put tomatoes in whole too and have the skin less likely to crack because of Bay,oak,cherry,gooseberry,current leaves.

A tip for harvesting basil: Pinch off the top of your basil instead of individual leaves! This will promote more growth and make the plant bushier!

HOT SAUCE ME!!! It's the way my dad has been saying for years he wants to make hot sauce with the peppers he grows. This would be such a joy for us!
It is fun to watch your garden and cooking transformations. i have been canning, dehydrating, pickling and lacto-fermenting garden goods for well over 50 years. Salad greens dehydrate beautifully! Just pull out the hard center stem, because that becomes super hard & tough. Then lightly heap on trays, do not lay flat or you will never get them off the tray! Dry slowly on low heat to retain the garden farm aroma and coloring of salad greens. Lacto-fermented lemons are incredible as is, in drinks or roasted. Try a spoonful of the lemon nectar & a few lemon slices squeezed in a glass of too sweet homemade herbal wine. Perfect match!
Dried tomato slices can be seasoned in so many ways, for snacks. Mexican, Italian, Asian, or just plain. My neighbor is addicted to dehydrated onions. Lacto-fermented or dehydrated veggies and fruits are the best snacks ever. My favorite is dehydrated watermelon. They stay sticky so sometimes need to be put back in dryer. So sweet!
My gardening tip is to plant tall sunflowers on the south/sun side of each bed, and add kale to each bed. Sunflowers will give plenty of shade to the garden greens. Aphids love sunflowers and kale, so all the other plants, including the beet greens, lettuce and swiss chard will be left completely alone. Naturally, each bed should have assorted herbs because bugs don't like the scents, and the flowers bring pollinators.

Yes please, I'd love to see your chilli video because I live in Southern Spain and this year I've been trying to grow veggies on my terrace and have an abundance of chillies as it's been so hot. I remember as a child in my country Armenia 🇦🇲 we used to go foraging End season and ferment 100s of pounds of mini cucumbers green tomatoes eggplants 🍆 cauliflowers cabbage carrots little green beans onions okra turnips garlic sun-chock little little unripe watermelon yummy yummy ❤❤❤

Gaz, i've started this year to cook for groups and seminars as my main job. A lot of my recipes are inspired by you. The people love the Piri Piri Veggie Tray and also different recipes. Its so nice to see the inspiration from the guests to start cooking vegan food, even though they are not vegan. Its just showing people that vegan stuff is amazing!

My ukrainian grandma used to add in the brine for cucumbers a horseradish root, black currant leaves, dill and of course lots and lots of garlic. It takes time to develop a good profound flavor but when it’s done I basically want to cry when I eat it. It’s been a while I’m abroad and this taste is something I miss so much. Vegetable fermentation is a core of Ukrainian cuisine, we do also whole tomatoes similar to cucumbers. I recommend you to try to make lecho - bell peppers with tomatoes (not fermented but cooked and jared), absolutely addictive.
Adding bay leaves or oak leaves to the cucumbers keeps them crisp over time.

@@gazoakleychefyou can also use gooseberry/currant leaves…many traditions depending on region and where you live that’s the beauty. Also I’d recommend adding some horse radish leaves if you are growing some or can find them…it can elevate the flavour. This goes for tomato’s and cucumber. You can put tomatoes in whole too and have the skin less likely to crack because of Bay,oak,cherry,gooseberry,current leaves.
