Looks really tasty. Never thought eggplant could be used in a salsa analogue.

Lots of Albanian singers have made it big, Rita Ora, Bebe Rexha, and even Ava Max.

Nothing close to a salsa... !!!!
There are no spices like in salsa, just salt.
In salsa, you don't put vinegar, nor oil...
Idea is that in the late summer/pre-autumn period, as we have a few late warm and sunny days, we tend to have a lot of produce of tomato and red peppers (sweet), so we do 2 things: Ajvar (Ayvar) and Luytenitsa (Lutenica), which are similar and very different at the same time. We stock them up for the winter, because some winters (used to be) really cold and sometimes even could not get to school or work, and these days you would make a cozy fire at the fireplace and open a jar of your ajvar, make some Balkan meatballs and enjoy the 60-80 cm of snow outside.
But as those are similar, they are nothing close to salsa. Like Gino D'acampo once said, : "if my grandmother had wheels, she would've been a bike." 😉
