So basically u need a black iron cookie sheet to get the cookie like she has it

For the chewy chocolate molasses cookies, she says 1/2 cup molasses in the video, while the recipe says 1/4 cup, I used the latter and the dough wasn't sticky at all. Also is the 325 F fan assisted?

I am not a fan for to much chocolate, I never put the amount of chocolate called for in a cookie recipe; I substitute half pecans or almonds and half chocolate chips.
Why are the measurements for Chewy chocolate Gingerbread Cookies different from the same named recipe in your Cookies Book? I made the recipe from the book and measured everything perfectly and they did not flatten out. So I went on line to see what I did wrong and the recipe measurements are different here!!

Id like to say that the chewy choco ginger are my fave and ive made them numerous times.
At first using dried ginger (bcuz i just couldn't be bothered with buying fresh) and they were good but then i started using FRESH ginger and it made such a huge difference.
