When something is vacuum sealed like most of those foods then it can stay fresh for a very long time! Many of them most likely have salt and preservatives as well but it's mostly the sterile packing :)
My grandfather was a space buff and visited cape Canaveral when I was young and brought back many types of "astronaut food" Our favorite was the ice cream but it said on the packet that because it caused too many fine crumbs to be eaten in space vuz they might cause instruments to fail. He also spent a bit on the astronaut ink pen that could write upside down 😂 I miss my grandpa.
I think you have a bit of a limited understanding of emergencies, it's not about during an earthquake but about the days after too. For larger ones the power outs will last for days even if you and your home are ok.
