About Onigiri:
There are about 825 varieties of rice in Japan, but only about 270 are cultivated, and only about 100 varieties are actually in circulation.
And since onigiri is often eaten after it has cooled down, rice with a grainy texture and stickiness is easier to easy to grip and tastes better.
For example：
"Shinnosuke" and "Yukiwakamaru" have a good balance of chewy stickiness and firm graininess, so they are easy to hold and have a grainy texture when eaten.
"Fukumaru" is characterized by its larger grains than Koshihikari.
"Ten no Tsubu" and "Kirara 397" are not soggy when made into grilled rice balls, and are fragrant and go well with them.
"Kinumusume" goes well with meat-based ingredients.
"Koshihikari" is a bit sticky for making rice balls, so it goes well with ingredients that have a strong flavor.
