    Sharing today a recipe of an Instant Amla Ka Achar that you can make in a jiffy!
    Amla, or gooseberries are a winter special and are a great source of Vitamin C and antioxidants. And they make for a great pickle too!
    It takes us days to make an achar but these days we can make this Instant Amla Ka Achar in just a few minutes.
    To spice up this Instant Amla Ka Achar, I have also added green chilies to it.
    You can adjust the quantity of the green chilies in the Instant Amla Ka Achar to suit your taste.

    Recipe:
    Instant Amla Ka Achar
    Preparation Time:10 minutes
    Cooking Time: 15 minute
    Serves: 3-4
    Ingredients:
    500g Gooseberry (amla)
    100g Green chilli
    1 tbsp Mustard seeds
    1 tbsp Yellow mustard seeds
    1 tbsp Cumin seeds
    1 tbsp Coriander seeds
    1tbsp Black peppers
    1tsp Fenugreek seeds
    1tsp Nigella seeds
    1 tsp Turmeric powder
    1 tsp Red chilli powder
    1 tsp Kashmiri Red Chili Powder
    2 tsp Dry mango powder
    1 cup Mustard oil
    2 tbsp white vinegar
    Salt to taste
    Method:
    Wash and clean the amla.
    Steam the amla for 15 minutes till soft and cooked.
    Cool the amla and remove the stones.
    Dry roast the whole spices till lightly coloured and fragrant.
    Cool and grind coarsely.
    Add the powdered spices and mix well.
    Heat the mustard oil to smoke point and cool slightly. Add the powdered spice mix.
    Add slit green chilies, amla, vinegar and salt to taste. Mix well.
    Store in clear glass bottles.
