In your video, you state you are using PEX, but you appear to be using copper for the supply lines. Can you clarify?

what is the reason for the subfloor lining up with the horizontal line on the plaster guard? is it purely for convenience when access may be needed after install? I want to install my stringer board as low as it can go under my subfloor so the top of my tub filler is as low as it can be into the tub. Thoughts?
