I tried this and it was great! I also made a Mediterranean variation of it: cucumber, carrots, red onion, olives, chickpeas, red peppers, and sundried toamtoes. Soo good!

Ty for doing a healthy struggle salad. I'm diabetic and most struggle recipes are based around pasta, rice, bread and potatoes, all of which raise our blood sugar. I think if I left out the couscous this would be a great diabetic recipe. Please do more diabetic friendly recipes. It's had to eat healthy and cheap. Possible, but requires some imagination.
Check with your doc or nutritionist or do some research. We have been using barley (instant) as a sub for rice or quinoa (which many use as a sub for rice), or cauliflower for the couscous. It would work fine, barley is also cheap, delicious and excellent for diabetics; but cut back on the dried fruits like dates and or raisins due to sugar content, otherwise, this would be perfect for diabetics. Remember, diabetics can actually eat pretty much anything, but you just need to watch portions, and watch out how much sugar/starch (glycemic index) is in the food. Good eating! ❤️👍

Maybe add another type of bean. Or cauliflower rice?? Diabetes is a struggle!
