  • Welcome back to the 1870s Homestead! I’m Rachel, and today, I’m excited to share my journey of making mulberry jelly. Each year, I’ve tried to perfect this recipe, but my jelly never seems to set properly. I suspect it’s because I’ve been skimping on the sugar. This time, I’m committed to following the recipe closely, and I’m taking you along for the ride!
    We started our day by harvesting a bountiful crop of mulberries from our favorite tree among the seven on our property. After washing and discarding the unripe berries, twigs, and leaves, I juiced about 3 gallons of mulberries to get the 3.5 cups of juice needed for this recipe. (here is a link to the juicer we use amzn.to/3RzD8I8 ) If your berries are mostly ripe, be sure to add a bit of lemon juice for acidity. Since I had extra juice left over, I’ll be making mulberry syrup too-a staple in our household.
    Mulberry Jelly Recipe Ingredients:
    3.5 cups mulberry juice
    1/4 cup lemon juice (optional, if most berries are ripe)
    1 package powdered pectin
    5 cups sugar
    Instructions:
    Combine the mulberry juice and lemon juice in a large pot.
    Add the powdered pectin and bring the mixture to a rapid boil, stirring constantly.
    Gradually add the sugar, continuing to stir, and bring it back to a full rolling boil. Boil hard for 1 minute.
    Skim off any foam that forms on the surface to ensure a clear jelly.
    Ladle the hot jelly into sterilized jars, leaving 1/4 inch headspace. Clean the jar rims thoroughly.
    Place the lids on the jars and process them in a boiling water bath for 10 minutes.
    Throughout the video, I’ll share tips and tricks I’ve learned, like the importance of being undistracted while making jelly and how to handle mulberries to avoid staining. I’ll also discuss how mulberry jelly makes a delicious substitute for grape jelly, perfect for both our table and our bird feeders.

    I switched to a steam canner years ago and would never go back. I can't lift a huge canner full of water anymore. My steam canner is USDA approved and gets the job done without wasting gallons of water. I love it. ❤

    One of my fondest memories from my childhood was going with my Mom and her Sister-in law to pick mulberries! The person who owned the tree lived new the river so weather was always warmer there than where we lived. I think this helped to ripen those berries to perfection. Some, well most were at least two inches long! The tree was humongous and was so much fun to climb. Us kids would climb and shake and the adults would collect them from the tarp. I remember the back of the truck being full of buckets of delicious mulberries. Lots jellies made from them. So glad yours turned out this year.

    Some dear friends have a big mulberry and their favorite way to eat them is over ice cream. One time several years ago Chuck was eating his when he saw one of the mulberries move! It was a big fat sleepy bumblebee that got caught in the harvest...poor little guy, they were able to rinse him off. 😅

    I love watching people can! I like Welches grape jelly on my toast or biscuits in the morning. Or peanut butter sandwich. I've never had mulberry jelly.

    Ive used pomona pectin with great success. It uses less sugar and always sets up.

    When my children were young I picked black raspberries and blackberries from the woods. I had blue hands all summer. I just canned current juice using my steamer. If we get the gooseberries picked I will do the same with them.

    I wish I had a mulberry tree. I had concords at my last property and made grape jelly every year. I use my steam canner for all jellies and jams. So light and so easy to use. I remember when yo had a hole in your canner. My canner is 40 years old and still going strong. They made things to last back then :)

    I've never seen a Mulberry tree growing here, but I found one at Home Depot that is a dwarf variety. I'm hoping we get a nice crop someday.

    Like you, I always used my pressure canner as a hot bath canner because the other ones rust and boil over. I recently got a steam canner and I love it! It’s faster and used much less water too. There are no/low sugar pectins out there. Pamonas is one I want to try. I used a low sugar recipe for my strawberry jam and it was delicious! Happy canning!

    I use the pink box of sure jell, which is for lower sugar. And I have found I can reduce a little more than it calls for and it still sets up.

    When I was growing up my mom would make fresh bread on the day she made jam and we would get to eat the foamy jam on fresh bread. She remembered it from her childhood that way - but of course my grandma made bread every day and my mom only made it as a treat lol.

    I wash my hands with a sugar and lemon juice mixture, takes 98% of the stain off :) Also if I'm making jelly I don't juice it just mash as it's cooking down, to leave some thickness to the texture...LOVE your video's. I miss "What;s for Dinner"

    As a little girl I remember climbing on the roof of one of grandpa’s buildings to pick and eat mulberries. So good! How I’d love to have a tree so I could taste them again.

    I’ve always used my Grandmaw’s recipe - 1 cup of juice, 1 cup of sugar, boil 5 minutes, pour in jars, seal, turn upside down on towel, wrap in couple more towels and leave alone until next day. AND NEVER do more than 2 batches at once, it will not set up - ask me how I know if that’s true.😂😂😂

      I agree she needed to boil it longer. Longer boil times ensures a jelly that will set. I always Waterbath my jars.

      With jelly you need to add additional boiling time.

    I think mulberry jelly tastes very similar to plum jelly, and my mom says it reminds her of a cross between plum and grape. It's definitely delicious! This was my first year making it, and it was also my first jelly to not set. Hopefully I'll have better luck next time.

    Try using pomona's pectin...you don't have to use as much sugar and I believe they have a specific kind for a very low or no sugar jam! This might help

    That's it. I'm maki g jelly this year.
    I have a fun way to collect Mulberries (vid on my site). Get an umbrella and turn it upside down under the mulberry tree. Use a stick in the other hand and hit the branches over your umbrella. The berries fall unto your umbrella then you dump that in your bucket. No need for tarps.

    I have found in my canning experience that Certo always sets my jelly. Not always with Sure Jel. Just made strawberry and blueberry and the certo worked perfectly.

    You need a longer boil times with both boils to ensure the jelly sets.

    Because of you, I planted 2 mulberry trees this past spring. I'm sure it will be a while before we get enough fruit to do anything with.
    Grapes are on sale this week at the store so I got some, used my steam juicer (best tasting juice ever! ) and made some grape jelly (I use a steam canner which uses a lot less water than a water bath canner does). I love having a variety of homemade jelly on the shelf. Open a different flavor each time.

    You should buy a steam canner, I got one and will never water bath can again. Uses less water and the jars are so clean.

    Oh. I never scrub my hands (or feet) when stained. I just squeeze lemon juice on them after washing. Bad stains (like black walnut) I wear clear plastic throwaway gloves and pour lemon juice into them and soak for an hour with my feet up watching my favourite RUclipsrs 😃

    I made Mulberry jam using Agar Agar. I have a meat allergy so I can’t use pectin. But there’s no actual recipe for it I can find so I used 1 tsp for 3 cups of Mulberries and it was too much. It’s spreadable but it’s a little more jellied than I was going for but it tastes good and I eat it on my bagel and that’s all that matters.

      There is citrus pectin. Pomona's one is from citrus.

      In Australia pectin is made exclusively on apples and citrus. Definitely vegan here . Are you thinking of gelatin? That's from animals? ❤

      Gelatin is made from animal bones, but pectin is made from fruit.

    Have you ever tried using lemon juice to the stains on your hands? I use it on berry stains of all kinds and it really helps.

    For stained hands, ive heard that rubbing them over with the green berries will remove it. Haven't tried to verify.

    Love this video! We have mulberry trees, the birds seem to get most of the harvest. Never thought to put something on the ground and shake the trees, lol. Have a question about the juicer. I make prickly pear jelly ( my families favorite). But it's such a chore because of the seeds and spines on the fruit. Would a juicer be able to handle that?

    My mulberries are falling off the tree all over the ground. I never use them, as I don’t care for them. I just let the birds have them. I am intrigued by you saying the jelly tastes like grape jelly, though. Maybe I’ll try making some and see if I like it.

    Try a little bit of lemon juice on your hands, it may not get all the stains out, but it's the only thing that works for me when I get "Harvest" stains on my hands.

      yup, just don't seal the lid down, just set it on there lightly.

    I’ve heard of using lemon juice on your hands to help bleach out the color from picking the berries. It’s worth a try.

    Love ya Honey, but I would NEVER make mulberry jelly if it tastes like grape jelly. I HATE that stuff. However, I love mulberry pies, and I have never noticed seeds, like you do with Elderberries, raspberries and blackberries. I would certainly juice those before making jellies.

    your not the only one that uses sure jel that takes forever to set thats why i use pamonas universal pectin it sets up fast and uses less sugar

    Im not sure but doesnt the instructions on sure jell tell you to put butter in it? I dont have an open box at the moment to check ivcould be wrong but i thought i saw that when i last made some

    Rubbing the green / underripe mulberries on your fingers and hands will remove the stain.

    I've got a stream juicer like that and I've made Bing cherry juice and nectarine juice. Both came out tasting awful. The directions said it should take an hour but it took more like 3 or 4. I'm so disappointed but don't understand why!

      I have made tart cherry juice in my steamer juicer and it works great. I don’t know why it would take 3 or 4 hours. I’m surprised the juicer didn’t boil dry by then! The juice might have tasted awful because it had so much of the steam in it. I don’t use mine for every kind of juice. It doesn’t make good apple juice in my opinion, I use my Acme juicer for apples.

    TRY SALT to get the mulberry stain off your hands & FEET.
