    I watch korean drama ever,except Sunday and Saturday, I just in joy watching all there bakery, and there food,I just love kimchi, and there chopsticks and how they prepare there food,all separate, love simen,mostly there bakery, save ice and street food,English.

      Keeping the dough cold during mixing-especially when friction from a food processor is involved-allows the yeast to ferment gradually when the dough is refrigerated. During this proofing period, the yeast develops complex flavors and creates just enough gas bubbles to make the dough pliable. At least that's the answer I found

      Brioche dough is very rich and sticky due to the large amount of butter and is proofed in the refrigerator overnight. The slow rising makes the dough more workable or easy to shape as well as improves the flavor. I imagine adding ice cubes helps them skip this step so they can make and serve the brioche donuts in the same day. Sour cream is usually added to cakes and sweet breads for flavor, moisture, texture and richness because of its acidity and high fat content.

      175g bread flour (high protein)
      75g steamed potatoe
      50g sugar
      5g instant yeast
      2g bread improver (optional)
      20g milk powder
      1 egg yolk
      50g milk
      2g salt
      30g butter
      *mix all (except salt and butter) till it mixed enough, then add salt and butter
      *add more milk if it needed

      벨라시티고 뭐고 간에 모든 제과점의 생크림은 기본적으로 식물성과 동물성을 혼합해서 써요
      동물성 100프로로 생크림 쳐봤나요?
      흘러서 절대 못씁니다
      생크림 액에 흠뻑 젖은 도넛을 원하시는게 아니라면 그냥 닥치고 드시길 희망합니다

      @@minettewalkers2808 Brioche dough is proofed (allowed to rise) overnight in the refrigerator. Though in this case, they appeared to hasten the chilling by adding ice to the dough. And I don’t think that was a chiller they put the dough in but a proofing cabinet. I could be wrong though.
