Tip one don't make long slices in the fish to let the seasonings get in it will get in there tip 2 use some flour when frying it so that it Seals Everything in.. that fish is going to be soaked with grease..scale it, gut it, rinse it off, season it, dredge and flour, and then deep fry it.. the flower will crust up before the fish starts to cook and then it will keep all the fishes juices in where you want them to be and the grease out where you want it to be..
Mojarra a la diabla is my favorite dish at the local authentic Mexican restaurant. In my opinion they are the best fish tacos you can make is by starting with mojarra frita
