Looks exactly like what I can buy at the grocery store here in The Netherlands! It's also common add a thick layer of butter and "katenspek" (kinda like bacon strips) on the rye bread when eaten with snert.
Awesome video. I have started making this again myself, and it is a very forgiving bread I find. More or less water, 8 or 12 hours in the oven, it all seems to come out just fine. Wonderful healthy bread, many thanks
It turned out perfectly; like at my grandparent’s in Friesland way back. I bought cracked rye in a U-Brew Beer making store (West Coast Canada) and followed the recipe exactly except adding a bit more whole wheat flour to get the right consistency. The result is superior to the dried out packages you can buy at the supermarket. Kornbeisser recipe also looks great.
I have been looking for a recipe for this style of bread for at least a decade. Thank you so so much! In Australia there was a place called Pure Life Bakery that made various types of loaves in this style. I made your recipe and it was, I think, exactly what I was getting back home. Now I'm excited to add fruit, nuts and other things :) Thanks again!

This is a very interesting technique of bread making, I guess it teaches you working with the dough like our grandmas did rather than sticking to exact measurements. I'm excited for the series too, rye is such an underappreciated but easy to grow and very nutritious grain. I hope you'll make Finnish ruisleipa, we'll see if it really is such a hardcore bread as it is described 😁.
I love rye and am quite fascinated by the different varieties of European rye breads. I'll definitely add ruisleipa to my list! Thank you for the suggestion!
@@bluemagiccleaners unfortunately, those won't work. I also have those at home, and when you mix them with boiling water, they create an oatmeal-like consistency. I'm not sure which country you're in, but if you live in the US, I've linked in the description box where you can buy cracked rye berries.
@@BakeAcrossEuropepls help where did i go wrong. I tried cutting its as hard as a brick when attempting to cut it just falls apart, there is no flavor 😮😮😮 i was so looking forward to this.

I did it i believe mine came out with much more whole grains maybe blend more

12 hours is a really long time. What are your thoughts on putting it in a crock pot with some water in the bottom?

Rye flakes, meaning the kind that looks similar to rolled oats?
