Many of us grew up with the message that vegetable oils are safe to use as a heart-healthy alternative over traditional saturated fats. Found at your typical grocery store, these clear, tasteless, and highly refined and processed oils include corn, soybean, canola, safflower, and sunflower oils. These highly unstable, highly inflammatory oils were given a gigantic push by advisory groups we trusted, including the American Heart Association, the National Education Cholesterol Program, the National Institutes of Health-and even our government’s own dietary guidelines. It turns out the truth about oils is not so clear cut.
In today’s episode of my series I’m calling Health Bites, I talk all about seed oils, why they shouldn’t be a part of your diet, and the type of fat and oils you should consume instead for optimal health.

I cut out seed oils and everything else not animal based. The benefits I’ve enjoyed since adopting the Carnivore way of eating (in no particular order): Excess weight gone, improved sleep, mental clarity, able to remember why I went into another room, varicose veins disappeared, sun and stove burns don’t hurt and are gone the next day, hardly any plaque and no bleeding gums at the dentist, rosacea gone, acne gone, mood improvement, joint pain gone, cravings gone, ankle swelling gone, cracked heels gone, and I never feel “hangry”
What about all the diets of patients in the nursing homes in the whole country?? This needs major help...right?
And the diets of children in school k -12. Schools are fast food now.
The whole point nursing homes operate on is to keep them alive long enough to exhaust whatever form of insurance they had or funding there is. So diet isn't likely to matter to any of those companies
One hundred percent. We can't trust any institutions to care for us. Even the most expensive nursing homes feed the residents junk. Talking from experience. They are so...ignorant.
I’m glad I found this channel. I’ve been dealing with diverticulitis issues for years now. I’ve also in the last year got diagnosed with high blood pressure. After my last ticulitis attack I started looking in to my diet. I’ve cut processed foods, sugar and carbs for the past 3 week. I’ve lost 20ib my body feels loose, I no longer get headaches, the brain fog is gone, my diverticulitis has definitely improved and best yet my blood pressure went normal after only a week.
you've done well, but you're not done yet, research why you should not eat dairy products... all dairy is produced from GRASS and grass is toxic to humans we are all lactose intolerant exept most of the world doesnt know it, once an animal is weaned it never drinks milk again, only humans, thats why we all finish up on zimmerfames or in care homes with dementia
I use ghee that I make myself from grass fed butter & real pure olive oil. (A lot of olive oil in the grocery store has other oils added to it. Put your olive oil in your fridge, if it turns solid, it's pure & real.) I do occasionally use coconut oil.
I stopped seed oils long ago and switched to grass fed butter, olive oil, coconut oil, gee and been on an animal based foods diet the last two years and am healthy than ever in my life. Before this I was vegetarian for 10 + years and it almost ruined my health, two years ago I switched to my animal based foods diet. Now have my health and strength back and my blood work is great now.
"and my blood work is great now." So, you mean you got your LDL-C into the physiologically normal/healthy range for humans--between 30 and 70? P.S. The best research clearly shows that butter, coconut oil, and ghee RAISE heart disease/heart attack rates whereas replacing them with seed oils lowers thos rates. You probably felt great because you cut out the junk for awhile.
just drink EVOO

You’re right! This is why my naturopathic doctor tells me to avoid going out to eat if possible. I use a lot if first cold pressed olive oil from one country, grass fed butter and ghee.
Thanks for all the great info! I 've been wanting to stop eating processed foods for quite some time and not having much success. I got a recommendation for one of your videos last week and can not stop binge watching!
I’m at the point where I’m afraid to go out to eat because I don’t know what kind of oils are used.
Once in a while it doesn't hurt.
I would love to read studies that back substantiate what you are saying. I like to delve deeper and learn more
Thank you for keeping us posted on all the latest health and nutritional information. 😊
My diet vice has always been butter and often felt guilty about loving it and using it often. I’m so glad it isn’t so bad after all!
Don't believe what one person on the internet tells you. Make sure to get your cholesterol levels checked because too much saturated fat raises cholesterol levels. That was certainly the case for me. Palm oil laden junk food is how I ended up with high cholesterol as a vegan. Avoiding things with more than three grams of saturated fat per serving is how I lowered my cholesterol.
I am so happy you finally talked about this subject because I think it’s absolutely the worst food in the world
It doesn't matter what you think. What matters is evidence. Here is a video looking at studies in reputable peer reviewed journals in regards to seed oils and information.

Lo and behold seed oils don't cause inflammation.
This is a great explanation of the fats issue! I will watch several times to make sure I really get it all... thank you!
I use olive, avocado and coconut oil at home
Recently I have been eating a very limited diet for improving my gut. The improvement is measurable...and awesome! Yesterday, I ate something new and healthy until I began to have noticeable bloating and inflammation. This morning, I've had to take a sick day! The culprit? Sunflower oil... which I thought was healthy. Looked this morning for info. Guess I have my answer on these oils.
I find it interesting that Seed Oils and Petroleum have similar use. Both come from Dead plants, Both are produced from Heat and Pressure. Both can be made into Plastic and Fuel. But we eat one and not the other.
Because one is unsafe to consume and the other isn't. Salt is a mineral and so is asbestos. Why do we consume one and not the other? Just because a food item shares properties with a non food item doesn't mean the food item is dangerous or unhealthy.
@@jennoscura2381petroleum isn't safe to consume its causing global heating
@@jonathonpotts5666 petroleum by itself may not be safe to consume. But certain things made from petroleum are safe to consume. Chlorine is a poisonous gas. Sodium exlplodes on contact with water. If you combine the two you get table salt.

Dt Hyman ' what do you think of Josephs organic bakery in Flordia he grinds his own organic Einkorn and Kamute grain . Uses only the grain , salt and water sits over night then bakes in morning . I love their bread.
Veg oil shouldn't be called "food"
thank you for keeping it real in this confusing topic!
Mark, LDL and HDL are not cholesterol; they are lipoproteins that carry cholesterol esters and triglycerides. But how many people even know that they also carry Vitamin E, COQ10, and Beta Carotene as well as other anti-oxidants? The main issue with the lipids is something called Lipid Peroxidation which happens much faster when the anti-oxidant levels are low. Seed oils increase the need for vitamin E, and studies have seem to suggested that carnivore animals don't become deficient in E. Exercise also increases the need for vitamin E. When you lower the LDL, yes you may lower the amount of cholesterol esters, but since those anti-oxidants are also in there, they also get lowered, which could be the main explanation as to why there are so many damaging side effects from taking statins. I personally love coconut oil, but I want to try unrefined red palm oil as allegedly it has a high Beta Carotene and vitamin E content. It's also about 45% saturates which is perfect for someone like me in ketosis
Actually, it's the number of lipoprotein-carrying particles that is the most reliable predictor and cause of heart disease: More is worse, and people with very high LDL will have higher apoB levels.
Thank you Dr Hyman, for all this vital research and providing us with the medical information, which should have been the duty of the FDA . Their duty is to protect and inform about potential hazards to the global consumers regarding food and drinks additives and provide information about health and nutrition and new medications.
It seems that either the FDA are criminally incompetent OR have been financially compromised. Either way, they should be disbanded for NOT carrying out their role to protect the public. 🧐
Being paid off.
Excellent Information As Always
Thanks so much for this valuable information. I've been taking flax seed oil as a supplement for years. I also use extra virgin olive oil and take fish oil supplements. The only bottle that contains omega-3 information on it's label is the fish oil. Do you know of any website that will list the omega-6 and omega-3 amounts in all the various oils? Thank you.
what about sesame seed oil. I love that stuff
it's seed oil
I heard it’s okay according to Barbara o Neil
Dr Hyman, could you comment on Nutrition Made Simple, who have checked out many studies that say that these oils are no different to the saturated fats. Its confusing getting opposite answers from opposing camps. Now they say they are just passing on the data from these studies. I'd like to get your opinion on these studies. thank you for your time and effort.
Speaking as a university researcher who studies nutrition myths, Dr. Hyman's claims simply don't hold water (he has a long history os slick cherry-picking) whereas Dr. Carvalho's reviews of research are excellent and unlike Hyman, he has no axe to grind or books to sell, and Gil really follows the evidence. Nutrition Made Simple is a great nutrition website, I can't think of one that is better.
Can anyone please provide a link to the study conducted in the psychiatric hospital?
I totally thought that was Jon Stewart in the thumbnail. I was wondering what he was talking about nutrition lol!
Is non grass fed butter better than seed oils?
Hmmm, changing your diet and creating enhanced focus may be easier than rearranging the style preferences of everyone else🤷🏻♀️. And you get healthier. 🎉
Is avacado oil okay? That's what I use
Yes but don't dry with it at high temps
Very informative.
What about peanut oil is that safe
no
Could you provide some resources with your video? I would like to look at the studies that you mentioned.
There is substantial information that contradicts the idea that vegetable oil is harmful. Dr Hyman is not known for his scientific knowledge.
Bingo!
You need to read Dr. Cate Shanahan's new book called "Dark Calories". I am convinced omega-6 oils are worse than smoking!
@@bordenf I would be more interested in looking at a variety of studies.

Hey Dr. Hyman
Do you do the micro biome test ro do you have a lab some one can go to , where then can get the test done and you can look at the results
Seed oils, such as canola, soybean, and corn oil, have been widely used in the food industry due to their low cost and high availability. However, there is some evidence suggesting that these oils can contribute to inflammation in the body, which has been linked to a variety of health issues.
Studies have shown that seed oils are high in omega-6 fatty acids, which can lead to an imbalance in the omega-6 to omega-3 ratio in the body. This imbalance can cause an increase in inflammatory markers and contribute to the development of chronic diseases.
It's important to note that not all seed oils are created equal, and some may be healthier than others. For example, extra virgin olive oil, which is also a seed oil, has been shown to have anti-inflammatory properties and may be beneficial for health.
Even so called VIRGIN olive oil has been compromised by manufacturers diluting this with ' other' solvents OILS. 🧐
"However, there is some evidence suggesting that these oils can contribute to inflammation in the body, which has been linked to a variety of health issues." Speaking as a researcher, the evidence has not backed the mechanistic hypothesis that seed oils increase inflammation--the best studies show that they do not, and replacing butter and other solid fats with seed oils LOWERS rates of heart disease/CVD events.
How about applying castor oil to the face and body? Is that safe? It's a seed oil. It says cold pressed. I'm sensitive though and our bodies do ingest these cosmetics.
I have been follow you for sometime and am very appreciative for your helpful advice and stories. Very grateful I found you. It appears to be difficult to find a functional medical doctor in my area. Any suggestions on how to find functional medical doctor near me? Thanks
I’ve given up on Flaxseed.

What is your opinion of Black Cumin Seed Oil?
What about grape seed oil?

Is the problem really the ratio of Omega 3 and 6 or rather the typically highly oxidized fats in Omega 6-rich oils? Is there any study that controls the oxidation variable?
Thanks 😊🙏🏻❤️👍👸
What about coconut oil? Is it as bad?

I've been watching your videos and others that talk about seed oils.
And I have only used olive oils for the last 25 years or so.
But...in Asia, let's say China f.ex. they use seed oils for everything, every day.
Why are they not obese and diabetic?
Most Chinese people I see, are slim and looking perfectly healthy.
I will still only use olive oil, but that is a good question I think?
Hi, my Dr wants me to reduce my cholesterol level and the NHS advise using unsaturated oils for cooking. I'm also prediabetic with high blood pressure- is ghee really safe for me compared to seed oils? I'm not overweight but am from the subcontinent. I'd love to hear what you think of mustard oil? My family and country of origin have been using it for generations until 1990s. Unlike the 'tasteless' seed oils you mention, this tastes good. I know we're told in the west "not for human consumption" cos of some rat study but I can't find info on human studies and would love to know more about it.
Thank you Dr Hyman. A quick question plz. Peanut is not a bad food as per most doctors n nutritionists. In fact you mentioned "eat peanuts..." But why oil is bad? Is it because of processing or no matter how naturally oil is extracted it's bad? I am talking about peanut oil.
I think he is saying that highly processed oil is bad but cold pressed oil is OK.
@@stshnie Oh did he say it? That means a naturally cold pressed peanut oil is fine or even healthy like peanuts?
@@criticalysproductsandservi2284 Watch from 10:25. I don’t think he’s actually recommending peanut oil. He mentions cold pressed soybean or Canola oil. If you google ‘Canola oil’ and look at the Wikipedia page, you’ll see a table that gives the nutritional content of vegetable oils. The ratio of omega 6 to omega 3 is what you need to look at - the lower the better.
I think the problem is if you consume the oil you’re consuming a concentrated form of Omega 6 (with little Omega 3). So, fine, eat a handful of peanuts but consuming large amounts of peanut oil isn’t particularly healthy. You’re better off choosing an oil with a higher proportion of Omega 3.
Love u doc❤
How should I do this if I am vegetarian?
Change to a carnivore diet.
Thank you Doctor. Please do a review / reaction video to the video by Dr. Gil Carvalho, entitled: Are Seed Oils Inflammatory?! (The *Evidence* No One Shows); on his 'Nutrition Made Simple' RUclips Channel. He claims there is NO evidence they cause inflammation, except in some rare cases.
I just saw that video where he cites studies published in reputable peer reviewed journals. I would love to see if anyone can actually refute that video. Good luck with that. Until there is good evidence seed oils are bad I will continue to use cheap, low in saturated fat, and high in omega 3s canola oil.
I was about to ask this as well
@@jennoscura2381 Speaking as a university researcher who studies mutrition myths and why people believe them, Hyman has a history of spreading myths but Carvalho's videos are terrific. It's the most neutral, science-based, and in-depth nutrition website I've ever seen.

Thank you Dr. Hyman, but I must somewhat disagree with you on this subject of the Hateful 8 seed oils. Those oils are as follows: Canola oil (rapeseed), corn oil, soy oil, sunflower oil, safflower oil, cottonseed oil, grapeseed oil, rice bran oil. What you fail to point out is that these oils are ALL toxic and should NEVER be consumed if at all possible. Not once did you mention the damage these PUFA oils cause your cellular structure, specifically your mitochondria. "Canola is definitely bad for you. The claim that canola oil (a rapeseed cultivar developed in the early 1970s) is “heart-healthy” is untrue. It’s based on the idea that because it has more omega-3 PUFA and less omega-6 PUFA that it’s somehow superior. This comes from an outdated notion of essential fatty acid ‘balance.’ But the reality is all PUFA is unstable and should not be refined or used for cooking." This is from Dr. Cate Shannan MD. She is also a biochemist, so I trust her expertise in this area a little more than you as she has done the chemical analysis. I suggest you update your knowledge in this area, because you are just DEAD WRONG to say any amount of these oils are OK. You need to clearly state that any amount of these oils are TOXIC for human consumption. The adverse health effects of consuming these oils over a lifetime is inflammation, brain fog, migraines, cancers, organ failure, obesity, heart disease, the list goes on. I'm wondering if you're getting your information from mainstream institutions such as morally bankrupt Harvard quack Guy Crosby, who tries desperately to make the case for seed oils. I suggest you talk to Dr. Cate Shanahan Dr to Dr. She can get you back on track. More information can be found here. drcate.com/seed-oils-questions-answers-for-your-health/ I have read her book "Deep Nutrition" and your book "Young Forever" for context.

Furthermore, research also shows that swapping butter for seed oils LOWERS rates of heart disease/CVD events. Everyone should just google Nutrition Made Simple and watch Gil's videos.
