A few guns gun rubbers do this intentionally to let you know what depth your at. E.g. red/pink turns pale white at around 10m since the spectrum of red can't penetrate that deep.

Worms (Anisakis) are easily eliminated by freezing for a few days the meat (< - 20°C)
