Thank you for sharing a recipe that includes sausage. My father was of German-Polish heritage, so I grew up outside Chicago, eating dishes of sausage, sauerkraut & potatoes. When I married my husband, who’s father was French and mother was Czech, I cooked a traditional French country meal for them that included sausages. Upon entering our home, they said the aroma was fantastic; however, when they sat at the table for dinner, the were horrified with the meal in front of them. What had happened? A fly or a hair in the dish? No, I was sternly chastised and informed that “Only poor people eat sausage.” What? Thank goodness the dish also included some chicken. I felt this was a directed insult, as I came from a family of 10 children, and they believed their son had married beneath himself. Needless to say, I continued to cook sausage and many other dishes as I explored and introduced our children to cuisines of other nationalities. Our eldest son is married to a wonderful woman of Mexican heritage, and she’s taught me how to make tamales, red and green pepper sauce, and cook with chorizo. I am sooo... grateful for your recipe and video preparation...!!! My maternal great-grand mother was from Baden and we were addicted to Eisbein Mit... Unfortunately the family never had a real and true recipe to prepare this dish... Fortunately you came along and, though late in my life, I have a way of recognizing flavors and smells across this screen and your ways plus the ingredients look and feel like a realistic touch of the past... I will copy and send your wonderful vision to my four daughters...!!! Can't do less than that...!!!

I can make that here but some of your ingredients I have to go to a specialist retailer. We don't get Strasbourg sausages here in New Zealand so will have to find something close to it.
Born in France close to Alsace, this is close to my mom recipe, last time I had it 1991 while visiting my parents, here in the US finding those meats is problematic at best! Thanks for the memories

I won't eat raw, fried, boiled or baked cabbage, but one its fermented, you couldn't stop me. My grandmother would make this often. I love it
