- Homebrewing a Starbucks-inspired pumpkin beer | The Craft Beer Channel
This week we take inspiration from an unlikely source and risk a backlash by homebrewing a pumpkin beer with actual pumpkin in it. Join us for a trip to Elusive Brewing and then Starbucks as we seek to create the perfect pumpkin latte - otherwise known as a pastry coffee porter - and to prove the haters wrong.

Come on then people. What's your opinion on pumpkin beer, and what's the best/worst you've ever tried?
Well, I guess it’s Halloween soon so why bin all the pumpkin when carving out a jack-o-lantern 🎃 and put it in a beer?
Absolutely love it (but I'm an American who's been living in the UK so it's a staple of Autumn beer for me...It's not Autumn without pumpkin spice and I've struggled up until this year where there's actually been a few!). We're doing a podcast where we are talking about US vs UK fall/autumn favourites and we've tried to collect all the pumpkin beers we can find! hah
unfortunately never had it. i'm hoping this videos inspires the creation of more pumpkin beers !
@@kw2142 There's been a surprising amount this year compared to the last few years since I moved here in 2013 so I am very grateful for what we did get this year and home we get just as much if not more next year. They get SO much hate and I think it's just become trendy to hate them now off of trying 1. Would you hate all stouts because you've had 1 badly executed one?
@@Prognosis__ Amen. And toast the seeds for a tasty snack!
I laughed so hard with "more IPA!"
It's funny because it's true.
Genuinely sounds delicious. Can't wait to see (if not taste) the results!
I enjoy a good spiced beer. I brew a Christmas porter with black pepper, clove and star anise. I was inspired by a video you did from Norway a while ago. I recall a Norewgian cook was making ribs with those spices.
Yeah! Some of our favourite vids came from that trip
I strongly support this endeavor. People for the Betterment of Pumpkin Beers!
We will join this movement.
This has inspired me to brew one of these again. I haven't made a pumpkin beer in a few years. I have a lot of pumpkin puree in the freezer ready to go. I'll have to look up a good recipe for a pumpkin spice blend.
Ahhh yessss a fine Quassant!!
I did the same concept recently - Gingerbread Latte Stout (gingerbread spices, vanilla, lactose, cold brew coffee)
Sounds delicious. How much spice did you add?
Ah man guys please make a pumpkin beer cake recipe video!
Can't wait to see the result
Signs are looking good! Kegging today!
I made *one* pumpkin spice porter years ago; one. One was plenty. After six years, I'm still drinking it. :|
I'm getting a good chuckle out of the America references. Not all of us are over the moon for Starbucks or pumpkin!
The best pumpkin beer is the one you've made yourself! This one sounds great
"Starbucks invented pastry stout." Wise words.
STARBUCKS BROKE BEER.
This beer sounds good, that I want to taste it.
Excellent share dude.
Nice use of the awards wall as a background 👍
if you got it, flaunt it.
ÑOOOOOOOOO!!!!! Wanted to see the end result you little teasers! Looking forward to the outcome of this. Hopefully it works well. Complicated getting the balance right between sweetness and spice.
Haha - we always do our homebrew vids in two parts, both to tease and just to make sure we get everything in there!
Just brewed my take on a pumpkin ale, basically an autumn saison, I will taste it tomorrow and see if I want to finally add squash hahaha I'm not really sure about it to be honest, let's see if by the end of your video I'm more convinced
I went for British ale yeast with less attenuation rather than adding maltrodextin. Worked nicely
Great thought - which one did you use?
@@TheCraftBeerChannel wlp 002. Stopped at 1.016.
Looks a great beer Bob and Jim
Who?!

We definately need a cake video!!!

Can...can Jonny be VP?
I have the Elusive beer in the fridge, can’t wait to crack it
I do as well! :D :D So excited for it but trying to hold off until Halloween haha
they selling it online anywhere?
@@kw2142 sold out direct hut they put up a post on social media with where you could still buy them from. One is from A Hoppy Place in Windsor and they ship to mainland UK. They'll also have some available at the taproom on halloween if you live local
@@kw2142 It has sold out on Elusives website but could appear somewhere else
Kinda funny that this was in my recommended, I just bottled a pumpkin spice latte stout. I bought an ingredient kit from Northern Brewer and found that the amount of spices they included were a little lackluster so I added 5 cinnamon sticks to secondary, and even though I still have to bottle condition, it seems to have worked out very well from the sample that I had. It kind if turned into a cinnamon coffee milk stout and I'm for sure going to make it again.
Sounds delicious and pretty similar to ours!
Fun fact: Pumpkin isn't a legally defined term (different types of squash are called pumpkin in different types of the world, based on what grows there), so Libby uses a proprietary plant very similar to butternut squash. If you use field pumpkin (the kind of pumpkin sold to make jack o 'lanterns) to make a pie or a beer, it would be stringy and gross. If you want to use fresh puree, just buy a butternut squash.
This is a GOOD COMMENT. Thanks for the facts!
This guy knows his pumpkin
@@michaeldeneault7308 lol I just heard it on a podcast a couple of days ago and now I have to tell everybody
@John Craver Nw, it was just mentioned in passing and I had to look it up to be sure, but now I might have to listen to that
The only Pumpkin beer I've ever had (I think!) is Pumpking by Wychwood and it was rank. Interested in Elusives offering, going to have to seek one out.
Flying Dog Brewing do a nice Imperial Pumpkin Ale called The Fear if you're interested.
I would not trust wychwood to do this complicated beer right.
Love the music Jonny, check out Brock Berrigan, mtbrd and Handbook.
I made a pumpkin stout on the weekend but I used a raw whole pumpkin (two actually) and mashed in them. Left in the oven overnight at 65C. The theory being that the boil Will remove any astringent vegetal flavor.
Interesting! Let us know how it turns out!
@@TheCraftBeerChannel I'll probably forget because I'm fermenting with wild cider yeast from last year's batch so I'll need to leave the beer at a low temp for almost 3 months. Loving the homebrewing videos though, it's a great hobby that needs to grow!
Are you releasing the recipe at all on grainfather app or brew father. Would love to give this one a go. Top vid
We will release it on Brewers Friend once we have made the tweaks after tasting
There are dozens of us! Dozens!
I didn't see you at the convention?!
great video! wouln't it make more sense to mash the pumpkin rather than add it to the boil? looking forward to the result since I definitely won't be brewing my own version ;)
We've asked a similar question to Andy so will report back!
Oy. I love black IPA and it's hard to find a good one.
Haha so do we! But in terms of sales and long term interest it sadly isnt popular at all.
@@TheCraftBeerChannel we even had a good one in Belgium (I know, weird). Brussels Beer Project Dark Sister was a good black ipa. Sad they took it out of their core range...
I want to try one of these!
I also want that jacket Brad has. Where can I get one?
I'll ask him!
Any news on the source of the jacket?
That’s a hell of a lot of spice gents...
Barely a gram per litre! But yes still more than most recipes - wait til next week to see how it turns out...
How do you stabilize your camera when doing walk-and-talks?
We do the walking/talking shots on our phone which auto-stabilises. It's a Galaxy S10
May I suggest using cold brew coffee. I’ve had good results.
How do you use cold brew coffee?
@@BernieBall about haft way though fermentation.
We're going another way to really amp up that fresh coffee bean aroma, but 100% this is a good way to do it for flavour
I've just brewed a gluten-free pumpkin ale using malted millet, and flaked quinoa. Added a small pumpkins worth of toasted purree and half a tsp of cinnamon and nutmeg. Got it fermenting now! I didn't quite understand your step with the coffee beans? Could you elaborate? Cheers, love the show!
Sounds good! The coffee beans will be covered in the next episode though which is also when we will release the full recipe.
I’ve also brewed a malted millet beer, flavour was ok but the efficiency was shocking. How’s the taste of quinoa in beer?
@@jonparry6462 yeah you have to add exogenous enzymes to convert as it's pretty unmodified. The flake quinoa adds body and is good for head retention, flavour wise it's slightly green peppers at a push
Any idea why it’s ok to put the pumpkin (which contains starch) into the boil rather than mashing them with the grains? Starch left in a finished beer probably isn’t a good thing for beer stability.
We have queried with Andy - will report back!
Hi there, I sent an e.mail to Verdant but I have yet to get an answer. I guess James is a busy man. It’s regarding your last recipe where he says they don’t double dry hop. Does that mean they only dry hop at the end of fermentation or they don’t bother with dry hopping.
hey! They definitely dry hop but only do it right at the end, after cold crash. They don't bother with the addition during active fermentation and in our conversation with Lallemand they backed that theory up saying the process will happen anyway, using the huge whirlpool addition
What about the pumpkin spice syrup? You didn't use that?
We didnt. Andy used it to prime his beer but we force carbonated ours so no need for extra sugar!
Love the video but the amount of spice added makes me nervous. I've made pumpkin beer with just spice before but I used WAY LESS spice. I can't wait to see how this turns out.
Haha it scared us too...you'll have to see what happens in episode two!
Why didn't they make the lightning bolt the s in their logo instead of the i? hehe
Good question.
I think the s as a lightning bolt might have some problematic connotations...
@@Ben_Dawson OH GOD yes it might.
How much pumpkin and spice are you guys adding for a 19L batch? You're recipe doesn't say.
One can (450g) of pumpkin puree and 20g pumpkin spice. Subject to tweaks.
Nice, I might make a beer like this soon!
Aaaaaaaaand their Elusive porter is already sold out :(
We'll find some places still stocking if we can!
@@TheCraftBeerChannel EDIT: I've found one and I've just ordered some! Cheers guys.
Awesome! Enjoy!
