I quartered the recipe, added baker’s coconut to the batter, and used coconut mana instead of coconut oil, but kept everything else the same, and it came out delicious. I’ve made mochi cake before, but it was incredibly bland and the texture was odd, but the texture of this cake is perfect and the flavor is good with the perfect amount of sweetness.

Republic cake must have had cake flour . Your cake is the real mochi cake without the cake flour .... I have made the mochi cake before and yours look authentic 👍💙
