  • Moong Gosht is a delectable traditional dish combining tender meat (usually mutton or beef) with nutritious moong dal (split green gram). This rich and flavorful curry is a favorite in many South Asian households, often enjoyed with rice or flatbreads like roti or naan. Here's a full description:
    Ingredients:-
    - *Meat*: 500g of mutton or beef, cut into medium pieces.
    - *Moong Dal*: 1 cup, soaked for about 30 minutes.
    - *Onions*: 1 large, finely chopped.
    - *Ginger-Garlic Paste*: 2 tablespoons.
    - *Green Chilies*: 2-3, slit.
    - *Yogurt*: 1 cup.
    - *Spices*:
    - Cumin Seeds: 1 teaspoon.
    - Coriander Powder: 2 teaspoons.
    - Turmeric Powder: 1/2 teaspoon.
    - Red Chili Powder: 1 teaspoon (adjust to taste).
    - Garam Masala Powder: 1 teaspoon.
    - Salt: to taste.
    - *Ghee or Oil*: 3-4 tablespoons.
    - *Fresh Coriander Leaves*: for garnish.
    Method:-
    1. *Preparation*: Soak the moong dal for at least 30 minutes. This helps in reducing the cooking time.
    2. *Cooking the Meat*:
    - Heat ghee or oil in a pressure cooker or a heavy-bottomed pot.
    - Add cumin seeds and let them splutter.
    - Add finely chopped onions and sauté until golden brown.
    - Add ginger-garlic paste and green chilies. Cook until the raw smell disappears.
    - Add the meat pieces and cook on high heat until they are browned.
    - Add chopped tomatoes and cook until they are soft and the oil starts to separate.
    3. *Spices and Dal*:
    - Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
    - Add yogurt and mix thoroughly, cooking for a few minutes.
    - Drain the soaked moong dal and add it to the pot, stirring to combine all ingredients.
    4. *Cooking*:
    - Add enough water to cover the meat and dal mixture. If using a pressure cooker, cover and cook for about 15-20 minutes or until the meat and dal are tender. If using a pot, cover and simmer on low heat until the meat and dal are cooked thoroughly, adding water as needed.
    5. *Finishing Touch*:
    - Once cooked, check the consistency of the curry. It should be thick and well-blended. Adjust seasoning if needed.
    - Sprinkle garam masala powder and garnish with fresh coriander leaves.
    6. *Serving*: Serve hot with steamed rice, roti, or naan, accompanied by a fresh salad or pickles.
Moong Gosht is a hearty and nutritious dish, offering a delightful combination of protein and fiber. The tender meat, combined with the creamy texture of moong dal and aromatic spices, makes it a comforting and satisfying meal.
