@@SylviaKim Bagoong is basically saeu-jeot, but cooked or prepared differently with spices and stuff. Just like jeotgal, there are different varieties. The usual one is made of shrimp, but for more exquisite tastes there is one made out of fish guts. Just use bagoong like a seasoning to adjust any dish, like kare kare, to your individual liking; hence, the reason it is served on the side. You can level up garlic fried rice with shrimp bagoong instead of using that magic sarap stuff lol.
For foreigners, i don't recommend adding bagoong because it is too salty.. the taste of kare kare is enough without it like other dishes in other countries... Its not really important, its only for the taste buds of most filipinos but not me.. highly not recommended..
You need to mix the shrimp paste to your Kare-Kare , the saltiness will counter the sweetness of the peanut and would taste like more of a viand than dessert. My mom would mix the shrimp paste while cooking so that she can control me from eating too much shrimp paste.

I Like it with Ox tail and it taste better. My mom would cook it just right so I don't need to put bagoong. When I went home sa Pinas, the resto that I ate in had it with tripe so I didn't like it. Minsan kasi me lasa at amoy malangsa. Veggie Lumpia with vinegar with a little bit of red chili pepper is delicious too. I never dip it in sauce other than vinegar (except lumpiang Shanghai). lol You should try one of my fav drink - Avocado shake!! When you finally visit the Philippines, have mango everyday. That's what I do. I have it for breakfast, lunch and dinner. You never get tired of it especially paired with your favorite Ice cream (Ube, macapuno and others). You must try going to different regions and try the different varieties of Filipino dishes. I miss going home to visit. Will try to visit next year. Kare kare is beek cooked with peanut sauce. Filipino curry is cooked with coconut milk and curry powder. Kare kade is a totally different dish from curry it’s name just sounds similar.
If you don't want the peanut buttery taste, you can substitute ground rice for the ground peanut. In some parts of the Philippines they don't put ground peanut or worse, peanut butter on their kare kare.

Bagoong is really an acquired taste and there are many types of it and the way you serve it, I find that a toasty well stir fried bagoong is more foreign friendly that a traditional sautéed bagoong, and I also prefer the toasty one, it gets rid much of the fishiness and gives more of the umami flavor out of it. One great example of it is the Barrio Fiesta bagoong that is served in their physical restaurants, not the jarred ones. But it's okay not to like it also, and really understandable, like I said it's an acquired taste! 👍👍 Edit: Also bagoong isn't supposed to be sour, looks like Paula put some vinegar in there when I looked at the footage hahaha, that's a weird combo for kare-kare, but hey taste is subjective so to each his/her own.

A sweet mango looks orange with slight yellowish on the inside. Also you can smell the tip of the mango if it smell sweet then probably that mango is really sweet...
You need put a very very little bagoong each bite of kare kare.. Bagoong is very salty but a little bit of it really compliment the Kare kare so you don't feel like its peanut butter.. But maybe she accidentally put a lot of peanut butter to taste like a dessert..
Kare kare is the biggest Pinoy delicacy. So expensive to make in America because oxtail became very expensive. It’s my favorite meat to stew for kare kare. And random fact, I love bagoong so much that I have kare kare with my bagoong.
If you eat the kare kare sauce with the kare kare, just a tiny bit, i think you will like it. The saltiness will be lesser with the creaminess of the peanut buttery sauce… hope you try it next time

There's a similarity of kare kare and pinakbet. When u mix well the "Alamang" to Kare kare, it may be look and taste like Pinakbet.

You need put a very very little bagoong each bite of kare kare.. Bagoong is very salty but a little bit of it really compliment the Kare kare so you don't feel like its peanut butter.. But maybe she accidentally put a lot of peanut butter to taste like a dessert..

Kare kare is the biggest Pinoy delicacy. So expensive to make in America because oxtail became very expensive. It’s my favorite meat to stew for kare kare. And random fact, I love bagoong so much that I have kare kare with my bagoong.
