Hummingbird cake is my all-time favorite cake. I asked my mom to make it for me on most birthdays but I'm going to try to make it this year for Christmas. Hers is usually a three layer cake but I love the idea of just two.
I hope you love it! You could make it in 3 layers if you increase the recipe by 50% or just make thinner layers. Increasing it 50% will give you a pretty big cake. Enjoy!
For best flavor, I recommend buying whole (not pre-chopped) nuts and toasting them in a 350F/175C oven for 5 minutes or until fragrant and deeper brown. 😊
I have bananas and fresh pineapple at home. I jusy hope I can put the pineapple in the food processor and bake it in a 9 x 13 inch Pyrex baking dish. My mother taught me to substitute when baking, i.e., if you only have three bananas when you need four, just add more pineapple.
You shouldn't have any issues baking it in a 9 x 13, but I'm not sure about the pineapple substitute as I haven't tried it myself. Let me know how it goes! :)

It depends on the size of your Bundt pan. This recipe makes about 8 cups of batter. Your baking time would definitely be different as well. 😊

can softened butter be peplaced with melted butter ?

You can always add more powdered sugar to thicken it up. Did you use spreadable cream cheese? That will make the icing pretty thin.
