What do you think of the one's with the handle on the back?

The ones with the handle on the back are good for applying a whole or large sheet of gold. This works well with large, flat areas and also in glass gilding techniques (Verre Églomisé).
The Gilder's tip brush is good for moving large leaves, as well as very small pieces you might cut with a gilder's knife and pad. You can use the edge or tip of the brush to pick up small bits and move to exactly where you want.
