Instant Pot BBQ Beef Brisket

  • In this video, I will show you how to make BBQ Beef Brisket in your Instant Pot or other Pressure cooker. Go to www.thebearded... for a printable version of this recipe.

    INGREDIENTS:
    3-5 pound flat brisket, fat cap trimmed to 1/8 inchrubBBQ sauce
    RUB INGREDIENTS
    3.5 tablespoons paprika2 tablespoons salt1 tablespoon cumin1 teaspoon chipotle powder1.5 tablespoons garlic powder1.5 tablespoons onion powder1 tablespoon pepper3/4 teaspoon coriander1/2 teaspoon cayenne pepper1 teaspoon oregano
    DIRECTIONS
    Mix the rub ingredients together if using. Whatever rub you’re using, rub the brisket down on all sides and stick in the fridge overnight.
    Cut the meat in half. Add 1 cup of water to the pressure cooker and place the trivet in the pot. Place one piece of the meat on the trivet, fat cap facing up. Place the other piece on top of it, fat cap facing up.
    Pressure on high for 75 minutes, natural pressure release.
    Carefully remove the brisket and brush it with your favorite BBQ sauce. It’s your choice now, you can either throw it on the grill and get it all beautiful or place it under the broiler in your oven.

    jaxx your just to dam sexy man . not much of a instant pot cooking kinda guy but that looked purty not as purty as you but purty good . must be raining alot down south everyones cooking indoors today . any way my bearded brother god bless you and the family .

    I tried a brisket half the size on a bed of new potatoes for 60minutes (heat off) and let sit for 2 hours. It fell apart! So delicious. I used half whey and half homemade vegetable stock with a tablespoon of liquid smoke sprinkled over the rub. I’m turning the liquid into a soup now by adding split peas and can corn kernels. I haven’t added the BBQ sauce yet because it tastes good already. Thank you. I just got my Instant Pot and hadn’t cooked brisket before.

    Im a die hard smoker bbq guy, BUT! I like the finished product from my pressure cooker as must as BBQ or smoker. Its a slightly different flavor, but not in a bad way. I find myself using my pressure cooker, more and more.

    Imo its the best method for cooking dang near anything. One tip i saw is the natural release is good for beef but you should quick release on chicken because the chicken you dont want to overcook

    Thank You! I'm new to the whole KETO/Carnivore way of eating and I am learning how to butcher my own meat... now I need to learn how to cook it😊😅❤ Love using my Instapot as I can't stand outside all day tending a B-B-Q.     I'm wondering if a cup of chicken or beef stock, with some liquid smoke (instead of water) would bring some more flavour to the dish. Will have to give this a try (using the braising liquid to make the bbq sauce)

    Thanks for the video! I followed the instructions and came out with a great tasting brisket. My only mistake was forgetting to turn the briskets over (fat cap down) when putting on my Weber Smokey Joe for around 10min. Meat side burned just a tad, but the rest was super tender. Although I prefer smoking brisket using the low n slow method on my Smokey Mountain, this method worked great when I didn't have a lot of time.

      I too prefer it low and slow, but sometimes you gotta do what you gotta do.

    Now, that's what I'm talking about. I love brisket. We have a southern food restaurant chain here called Lucille's. You may have it there, too. They make a good brisket, but I'm pretty sure Jaxx's is better.

      I love brisket as well. Nothing better than a slow smoked brisket in my opinion, but this is a good substitute.

      I would say this is a great option for quickness for sure. Perfect for those time where brisket is on sale or you are craving it but don't have the time.

    I have found with pressure cooking slabs of pork shoulder steak that if you separate the slabs with something (I use long potato wedges) your cooking time will be significantly reduced.

      How do you typically prepare the pork steaks when you pressure? BBQ flavor, do you make a gravy grill them off after?

      @@JaxxDrinkwater I'm a simple guy, pork shoulder steaks are the cheapest meat at our Aldi's. They just go in the pot with salt pepper and whatever seasonings are at hand (high falutin people would call that a dry rub--LOL), sometimes bbq sauce but since I'm on a keto diet now I avoid the sugar and bbq sauce is out. Water up to the base of the trivet with onion and potatoes in between slabs as spacers. About 40-45 min at high pressure and let the pot cool naturally --then the meat falls off the bones, and if you do it with pork spare ribs, the bones are soft enough to eat.
      If you want something good try pressure cooked chick peas with onion, celery, seasonings, and a half pound of smoked sausage. Soak the chick peas, sautee the the veg and sausage, add the peas and cover with an inch of water cook till soft (again about 45 min on high pressure) and then puree with a stick blender. Then add in the other half pound of sausage sliced and fried (or do it with ham and a ham bone). It's my basic red beans and rice recipe made with chick peas and pureed.

      I love pressure cooked chickpeas. I do the same basic recipe but I don't soak and I don't puree. Way better texture and totally different flavor than canned chickpeas.

    Briskets are hard to find up here for some reason.. I got to get one of those Instant Pots on Black Friday. Sure was some good looking brisket for being done at warp speed. Thank you for the recipe, Jaxx

      Really? you can pretty much find them anywhere around here and I can most times get prime from Costco. Have you checked some of the big box stores.

      All we have up here is shoe-box stores.. in the boondocks. One road and if they close it for an accident we shut down. And this is the "Trans-Canada Highway" from coast to coast.. I have heard of a new place that I have to check out, I saw an ad for brisket. You never see skirt or pork bellies or anything like that here. Thank you for the reply, Jaxx

      Ive done some ribs before & they just fell off the bone trying to get out of the pot they were so tender :)

      Did you natural release of quick release? I find it best to quick release. I videoed ribs last week and used St Louis ribs 25 minutes quick release. I was able to get a clean bite. Will try 20 minutes next time with a quick release, just to see the difference.

    Can I stick it in the smoker instead of on the grill? What would your recommendations be for that? Could I do 60 minutes in instant pot and an hour in the smoker?

      No time change for halving or doubling recipes. Just make sure you have the minimum liquid in the pot. Thanks for watching Sam!

    How long do you cook it on the grill for? And if you have to put it in the broiler how long do you do that for? And does putting it in the broiler mean just putting the broiler setting on the oven?

      If you want to pop it on the grill after you pressure it, you're just getting the sauce hot and you like the color. Same with the broiler and yes, just set your oven to broil and pull it when you like what it looks like. But with the broiler, you must watch it carefully. It can go from good to burnt in seconds.

    Looks fantastic.. I got us a 14 qt. Pressure cooker.. Was wondering if I could do a 10lb. Brisket and if I should adjust time.. Any suggestions??

      I don't see why you couldn't, but I can't even guess on the time. You'll have to play around with it. I would try to err on the side of caution with the time. Set it for less than you think - if it's not done to your liking, you can always add more time. If you cook it too long and the thing just shreds to bits when you look at it, you can't take it back. But a heap of shredded meat would be nothing to complain about. (unless you wanted to slice it and not shred it lol). I would to hear back how it turns out and your method.

    How long on the broiler mode in the oven? I dont have a grill

      Just until it starts to brown and bubble, or however you would like it to look. Not long though, depending on your broiler setting and rack level. Just keep an eye on it and when you like what you see, remove it. It is an optional step - tasty, but optional. You can just slather it with BBQ sauce of choice and chow down if you like.

    I'm sensitive to most seasonings. Is there a way to incorporate wood chips with this way of cooking brisket? Thanks for sharing! Really looking forward to trying this!

      I would just go with salt and pepper if tolerable. For smoke flavor, liquid smoke is all you've got unless you go with a smoky chipotle powder. Wood chips need smoke to flavor which is not achievable in the pressure cooker.

      You can find it in the supermarket in the section that has ketchup and Worcestershire and stuff. I usually find it at Wal-Mart.

      You can find it in the supermarket in the section that has ketchup and Worcestershire and stuff. I usually find it at Wal-Mart.

    it looks kind of dry. also seem overcooked. was it still moist? my roomates have an instant pot but not scared it will overcook brisket.

      Dry, no. Overcooked? Well, you don't really want a brisket undercooked. You won't be able to chew it. It's a meat that's usually cooked low and slow to break down the bits and bobs that make it tough.
      Despite what it looks like, you can see it was actually pretty hard to cut with a knife it was so tender and not dry at all.
      If you don't want to risk it in the Instant Pot but have a gas grill, you can try this brisket and it's pretty amazing. ruclips.net/video/oUv8cuzbfEI/видео.html

      Brisket is served "done" and that temperature in itself is variable, depending on the meat and how it behaves. If you would like a medium rare, rare, or medium brisket cut the time down - and get ready to chew!
