  • In this video I talk about how to store grains, how I have changed things up a bit, and talk about what Mylar bags do, what oxygen absorbers do, and when to use them when storing grains.
    Do know, storing grains isn't complicated! But there are a couple of grains that need a little bit of extra help!

    You know, I think we are VERY fortunate to be living the the U.S. where so much good grain is grown. I don't know if you are very familiar with environmental conditions in Australia, but they have bugs and bug-related insects there that will make anyone from the hot humid areas in the U.S.'s heads spin! Where we have "daddy longlegs" they have hairy brown TARANTULAS hanging out regularly in their houses. That is just one SMALL example.
    Anyhow, I noticed that a very savvy sourdough baker who has been home-milling her grains for at least a couple of years now -- in Australia -- did a video about how to keep grains to keep out the weevils. She actually got a "freezer chest" to keep the largest part of her wheat bags in the freezer in order to kill the eggs and such of weevils. I thought she would be happy to know of your experience, but her response, if she were not such a sane sort of person and if I didn't KNOW how crazy "buggy" it is Australia, I honestly would not have believed her:
    But the fact is, she (Elly of the channel Elly's Everyday Sourdough and another channel about soap making) has been very active with others in her country who are whole grain enthusiasts and goes to conferences where those who grow the grain in Australia speak as well as bakers, etc., and due to her active participation and interest in finding every kind of wheat she can try, she has met a NUMBER of people who actually grow the grain there in Australia -- and they have told her, (I assume this is how she knows), that weevils actually LAY EGGS on wheat crops in that country!
    Why? I don't know. Is it because the insects were there first? I have no idea. I wonder if you have heard about this. Elly thinks you have been incredibly fortunate -- but I tend to think that maybe it is the geography here that changes things. I don't know! Thanks again for all you do!     I had a 5-gallon bucket with one of those gamma lids (which was INCREDIBLY hard to fit onto the bucket and took two men to get it to fit on), and I had hard white wheatberries in there mostly, but there was plenty of room and I added a big sealed (by me) plastic bag of corn kernals -- one of those 2-gallon bags they sell at the store. We DID have a problem with pantry moths in our kitchen this year, and it was in the kitchen I had the bucket. I didn't open it for probably a month or so, and when I did -- WHOA! Definitely pantry moths and maybe some other insect, not sure. Broke my heart! Had to dump all of the corn (only about 4 lbs.) and hard white wheatberries (more like 15 lbs or more) into the compost pile. Did I have the gamma lid on tightly enough? Yes, I think I did. I think one or more moths got in when it was open and I didn't catch it. Otherwise I have not had problems with bugs in any of my storage buckets or jars (talking here over the past 2-3 years). I'd say if I ever have a pantry moth problem in the kitchen again (which I think began with a jar not sealed well enough of instant potato soup I had made with potato flakes and other ingredients). :::sigh::: Those moths were here for MONTHS and I think we MAY have seen the last of them. I hope so! The jar I had that was not sealed well enough was one of those that has a rubber ring that lines the top of the rim before you close it with a clamp. The rubber ring was missing and that's where the pantry moths apparently had their own breeding station in my kitchen -- for who knows how long!

    If you put bay leaves in with grains and other dry goods you will not get weasels. I add about 15 leaves mixed in each 5 gallon bucket. No need to freeze and will be good for years! No need to freeze to freeze any dry goods prior to storage either

    Hi, always enjoy your videos. Didn’t know about freezing some grains before your video a few months ago.
    Just an afterthought, it is easy for me to freeze things up here in Wisconsin this time of year. We rolled our own too when I was younger

    Always good to refresh my knowledge. So far, my grains are storing well in buckets with their Mylar bags. And I’m happy to say I use them more now that I got an electric Wondermill.

    For brown rice and oats, have you considered vacuum dry sealing in mason jars?

      You will probably use an electric far more than a manual. I recommend a manual mill as your second or backup mill.

    After many years of giving up on making bread that came out dense and hard, i followed your recipe and the bread came out wonderful! I added almond flour and really enjoyed your bread recipe. I have not yet milled my own grains, but just ordered some and will once again open my Nutrimill that I bought many years ago, which was packed doing nothing all this time. Wondering where you get your 1 gallon glass jars from. I ordered 10 lbs of red wheat berries and looking to store them in 1 gallon glass jars like yours. I have watched so many of your videos and am so glad you made this channel so people like me have hope once again!

    Good evening it’s Tuesday 14 ❤️ I had a video of yours pop up earlier and you had a book I think you use it as reference and it was nurse? something of course I can’t find that video again and I would like information on that book you were referring to I’ve been milling for 14/15 years and have just learned the Bread Beckers have videos and this is how I found you. So nice to have like people God told me loud and clear when I was living in Florida Karen mill your own flour and of course I had no idea what He was talking about cause all I could think of the book “the little red hen” which made me more baffled so I had to search. I’m looking for more information and you are awesome. Thanks for the information 🙏❤️

    I am VERY new to all this. I am interested in organic grains. I am trying to buy grains and checking out different providers. I really like Azure Standards prices and they have a drop-off about 5 miles from me here in Florida. I am seeing some reports of grasshopper heads, rocks and other seeds in their grains. That scares me a bit😬 If I opened a bag of berries and found that, I would have no idea what to do. Have you ever run across that? I have been watching a LOT of your videos and learning so much.     Hi...am looking to buy a grain grinder to use in making my own talc free body powder...it has to grind very very very fine..I tried few machines but never got the results I want....any suggestions please

    Ok, i have my wheatberries, white rice, rolled oats, and quick oats all in 5 gallon buckets with the gamma2 lids. I completely forgot to freeze everthing before putting in buckets. In our excitement we just filled the buckets up and put them in storage, in an unused room upstairs. My question is, if i get the oxygen absorbers to put like in my rice or oats, do I have to put a new absorber in everytime i open my bucket?

      Nope! Just check your oxygen absorbers periodically. If they become hard, throw them out and just replace them with new ones.

    When you freeze rice I thought it gets wet, what do you do for this? We have freezing temp tonight and tomorrow and I plan on putting it outside over night thanks!

    I've sealed mylar bags with a simple curling iron. Easy peasy works great and nothing extra to buy. Felicia? I'm wondering how to mill for cream of wheat? And how to grind to make other cereals. Anything we should know?

    I have a question.
    We use our seal a meal all the time and the attachments for mason jars.
    What is your opinion on storing grains in a mason jar using that machine to suck all air out ?
    Would that be sufficient wo oxygen absorbers?

      Many think that is the case. I love the half gallon mason jars and use them (vacuum sealed) for storing grains. Getting hard to find those jars now.

    We buy our grains in 6 gal. buckets but I notice over the years the some buckets will get a dent in them, are they still good and why does this happen?

    Do you need to freeze your grains first? How long does it take to thaw them before storing in glass Mason jars?
    I don't have much freezer space. Do I thaw in a bowl? On a cookie sheet?

    So my husband took my 6gallon buckets of hard red and hard white wheat berries and stored them in a storage unit. I was so irritated but we were trying to renovate. Now we’re in a new house and he got them out but left them outside one day and it rained on them!!! They both have gamma lids on them. Should I trash them or are gamma (tightly sealed) enough to keep rain out? The berries are about 3 years old now.

      I would think they would still be dry, but you could always just open and check.

      I would if I was storing them for more than a year. Otherwise I have just left them alone, stored them in a good bucket with a good lid, and not had an issue. But that is all up to you 😀

    Question: I recently ordered from an online company some grains in buckets. When I opened it, the grains did not look as fresh as the grains I usually buy from another source. How do you know which companies are reputable… meaning…. They don’t send you OLD grain? It sounded as if the company I bought from would be a good one, but honestly, their grain was not as fresh as it should have been. Any tips about which companies actually would be honorable? The very last one I ordered from is questionable to me now.

      Grain providers are not all created equal! I am affiliated with several, but there are some I recommend more than others, due to their extremely high quality standard.       You're trying to store cream of wheat? Why not just store the wheat and then make cream of wheat whenever you want some?

    Question:
    Is there a handy dandy chart that you know of that says when to soak and what for. For example: nixtamilize corn for : masa flour don’t nixtamalize for cornmeal for cornbread, polenta….. things like that. My brain is about to explode with all the phytic acid videos people are putting out there, doctors included. I want it simplified. So I thought I would ask you first if you know of a simple chart that someone has made for All grains? Soak this when making that etc.
