    That soot is not just a carbon deposit but mostly oxidized oily/fat mixed with carbon deposits. The most stubborn kind usually has to be softened with a combination of caustic soda (NaOH) and detergent. The reason these sorts of deposits can be removed with most "alkaline" agents like ammonia is they will "hydrolyze" (chemically breakdown) oily/fatty reside to make them water-soluble. That is the chemistry magic behind most strong cleaning agents for fatty/oily residues

      Yep, I make a 30% caustic for our process and we had a blacked tray in our pie oven, gave it a soak in the caustic and boom, clean tray lol

      Yes, you're right. Also, you can heat the pan til' it's smoking, heat it some more, and brush off whatever is left over. It's the oil that binds everything else to the pan.

    Thank you so much for sharing this with us! I've got at home a deep fryer with soot all around, I tried to remove it by hand then with power tools but even then it took me almost half an hour to remove just a few dozen square centimeters...
    I'll give the ammonia a try!

    Baking soda and vinegar neutralize each other because baking soda is base and vinegar is acid, so you can't expect this to work. Also today's modern non-stick pans probably need different technique as the protective layer would also come off.

    Everyone is going to comment on the "sit-tric acid" vs "crit-ic acid" thing. I would make a pronunciation error or two if English was my second or third language. I think its cool, because that means this mistake was made by reading and not copying another video.
