Malcom, have you ever heard of the food processor trick for making hollandaise sauce? It's near fool-proof, faster and a lot less work than doing it by hand over a stove top. Just melt however much butter you want to use in the microwave, put your eggs and lemon juice in the food processor, and then turn it on low speed as you very slowly drizzle in the melted butter. Adjust to taste as needed. I've been doing hollandaise like that for several years and I've never had an issue once I got the portions of butter/eggs down right.
Hey Malcolm, I really appreciate you explaining the cuts of meats you use. I often take what cuts you recommend to my favorite local farms grocer and usually get a similar cut or can order the specific cut. It has helped me a lot so I thank you for that. And I have adapted several of your recipes for in-house roasting in oven or slow cooking on our gas grill because we don’t have room for a separate smoker like a Traeger or Egg, but we have set up our Big Chief smoker and used that for a pan or two of wood chips to get that smoky flavor before we oven roast it or put on the gas grill. So you have helped me with what chips to use when. I love your recipes and videos - you are a great teacher. I can only imagine your neighbors must love the aromas wafting from your backyard kitchen. Wife just had some for lunch, she made enchiladas a few days ago with some of the pulled pork, but let's face it. You just can't cook one, or a small amount when doing low and slow, smoked items. My wife and daughter don't really eat much of my smoked meats, so adding eggs, and hollandaise sauce looks like a great way to keep from freezing my pulled pork. Did your smoked ham recipe, putting apricot jam on the outside, and it was FANTASTIC!
This was phenomenal!!!! The addition of the hot pepper jam is great and that butt was cooked to perfection! I am definitely going to try this on my Traeger! Great job Malcolm! Be well 🌞👏
Not trying to brag or bag but I did a version of this over a decade ago and a few times since. It's AMAZING. The smell of bacon like moist BBQ meat and a BBQ sauce with a bit a spice and a busted egg yolk is wonderful.

A quick way to make a perfect poached egg is get water right at boiling, say 210F, swirl it in the pot to create a vortex. Crack the egg in a small bowl then put the contents in the vortex. It takes about 1:30 to 2:00 minutes to cook. The vortex holds the whites tight to the yolk and provides a plump, juicy yolk. Great reason to have pulled pork for breakfast!
