For the Pastry:

1 roll of premade or home made pure butter puff pastry.
For the French vanilla slice pastry cream (Yield 500 grams):

1 vanilla pod
30 grams of corn flour ( starch)
80 grams of sugar ( 40 grams for the milk + 40 grams for the eggs)
350 ml of whole milk ( full cream milk)
4 egg yolks ( best quality you can get)
35 grams of Butter.
For the whipped cream:

100 ml of heavy whiping cream ( pure cream)
10 grams of caster sugar ( white granulated sugar)
For the filling :

200 grams of fresh raspberries
Topping :

icing sugar
Cooking time:

puff pastry : bake for 20 minutes at 200 degrees C / 396 F

My husband’s mother was French Canadian ancestry, her parents only spoke French and she only spoke French when she started school in the first grade when they moved here to America. I can’t imagine how hard that must have been to start first grade and not speak English in a little country school. Some of those country folks aren’t very hospitable to strangers so I’m sure it was very hard for her. But she was a wonderful cook. She grew a huge garden and canned the food she grew. She raised 400 chickens every year to cook for her family of 6. She cooked 3 big meals for her family everyday. I loved and admired my mother-in-law law very much.

BTW that live chat was a lot of fun (although I watched the first part I missed and saw you got hit with a lot of the same comments/questions). When I lived in downtown Boston there was the most amazing French Patisserie, opened by a legit French Pastry chef. Eventually he took the business to the trade only, to sell to high end restaurants. OH that place was beyond amazing, but it ruined me for the mediocre stuff some local places try to pretend are the read deal. Well this looks like the real deal! Hope I can try soon.

Your ingredients may be similar to other recipes but your method and care is extraordinary. Within 5 minutes you've done more with your milk and eggs than any other vanilla slice video I've seen. A simple slice with your methods would taste incredible, no doubt all of your extra steps and levels make this recipe a knock out.

I made this recipe for a school project, and it turned out great!
In my human geography class, our final project was to make a dish from another country with a group of four. My friends and I had a great time, and it was super easy for all of us to do. We used 3 teaspoons of vanilla extract instead of a vanilla pod, and two pullsbury croissant cans, which we rolled out and pushed the seams together so it’s like the puff pastry, and we didn’t have to put one pan on top of another. It was delicious, and even our parents wanted more! We brought sample sizes to class the next day, but the pastry became soft! It still tasted good though, and some of my group liked it better soft.

I was making this when I was 13yrs old. Then o tried it with thick whip cream and threw in some fresh blueberries when whipping the cream it tasted even tastier
