Great and informative video, but with the handbrake off, the wheels on my A2 don't spin like that, they only make 2-3 turns at best. One of the shoes definitely touch the drum during driving, as the left one gets hot.
Can I loosen that bolt on the handbrake, if the lever is all the way down? Cheers

You probably have a problem with the brake shoes sticking on the left wheel. I would check that. You might try by loosening the bolt, but you will probably lose the handbrake and that is a no go.

Only getting one side to hold correctly at 4 clicks. New cables already installed. Shoes still have plenty of pad left on both sides.
Tried tightening with 10mm console device but still only one side works properly

You probably need to shorten/adjust the cable lenght on the side that is not holding correctly. Check if adjustment is possible at the end of the cable. With console device you adjust both sides simultaneously.
