Thanks! I'd say October would be best but, you can find them from July to December.

Are striped marlin a protected species (hence the catch & release) in Mexico waters ?
No. They are legal to take.

At what depth are u guys trolling ?
We are trolling surface lures.
Maybe you meant, the depth of water. In our area the depth varies widely and doesn't play a big factor with with dorado. They are after bait, find bait you find them. Billfish are usually found further offshore in water over 300 feet deep. I hope that is a better answer?
