Great job, Tom. Fyi to all ... don't ever be afraid to wash with warm water and Dawn dish soap & toothbrush, then wipe dry as a first step in cleaning out those inside channels BEFORE the mineral oil bath (which will displace rest of water, lube/descale the channels, springs, pivot, and blades). Otherwise, Tom has this entire process down. I'd save your $ vs. that ultrasonic cleaner ... spend it on new knives, Dremel tools, and jewelry/flowers for Mrs Delights 😉).

Personaly if it was my knife sense there is no pitina i would have sanded the bolsters and blades to 3,000 grit and polished them all up a mirror finish like new!
