Ingredients:
1 1/2 pound pork tenderloin
2 tablespoon cajun seasoning
6-8 strips bacon (I used Maple Bourbon Thick Cut)
4 tablespoons peach jam (you can use any jam)
3 tablespoon grainy dijon mustard
Directions:
1. First, pre-heat the oven to 400 degrees.
2. Rub the pork tenderloin with the mixture of the cajun seasoning and and wrap the bacon around it tightly.
3. Heat an oven safe skillet over medium heat, add the bacon wrapped pork tenderloin and cook until it is browned on all sides, about 10-15 minutes.
4. Transfer the pan to the oven, roast until the pork reaches 140F, about 10-15 minutes.
5. While the pork is in the oven, mix the mustard and peach jam in a bowl and set aside.
6. Pull the pork out and cover with mustard and jam mixture. Put back in oven and let cook for 2 minutes. Pull out and let it rest before serving.

Guess what I made last evening after a day in town Birthdaying -with two of my girl friends?
Stopped in the butcher shop for ingredients, went home and Viola!
The house smelled A-mazing.
My friends were impressed that I knew what I was making, and what I needed.
Having just watched a half dozen of the newly released recipes the day before, I was ready.

😢Well a tiny bit embarrassing as it could be... I used tri tip instead of pork (tri-tip was on sale) and didn't cook it as long (it was a bit thicker piece of meat) so it didn't get the caramelized goodness... So I had to cook it longer afterwards... But.... The (apricot) jam/ mustard sauce was yummy and the thick bacon (got Cherrywood thick) was d-lish... I wanted to say I'm pretty sure when most people go through recipes on videos they write it down they watch the video a couple times and then they try to get everything together so I pretty much did that, that's what I usually do... My husband believed that the pork would have cooked faster...(of course I almost cried when it didn't match but I didn't only cuz it still was tasty)... he did say that he liked it... and actually ate everything on his plate😊 I do think I'm going to try it again with pork next time...bye🌺
