Mud drying time does matter for the first time DIYer. You will want to practice with what ever you purchase. The mud will dry faster on unprimed or mudded drywall. I would recommend a quick sand and then prime so all your surface is at the same drying time otherwise you may get one result in one area and another result in others. Prep is your friend in all projects 👍🏻

You may be able to use a small roller. As for knocking it down, they make corner trowels out of plastic that you could get. Otherwise, get a small black knockdown knife and cut to size.
or flick the end of a strong bristle brush with some mud on the end , dip brush in drywall mudd that is watered down slightly(pancake batter consistency or thick ketchup) so dip a little and flinck bristles in direction you want to put texture and let set up and then knockdown with flat edged item such as smal putty knife or anything you can find really it just needs to flatten splattered mud slightly to give knockdown look , remember u can always let dry and sand to perfection
I’d try patching it in one area first. Then if it doesn’t look good you can continue from there. If it does look good, then you won’t have to do as much work.
I tried to do a texture with roller and all purpose mud on non brand-drywall, experienced a problem of drywall’s paper peeling off when rolling the mud over, did a coat of all purpose mud ski thinking this might help in supporting the paper so it does not peel, tried again but same problem, how you guys recommend this with such issues, what I am missing here if any?
Your mixture may be a little too wet. The moisture is soaking into the drywall causing the paper to separate. Try a dryer mixture. If that doesn’t work, try rolling less on at a time so that the mixture dries before it has time to saturate the drywall.
Great Video! I am going to do a ceiling but I am worried about the knock down portion. I tried it on a few sample boards and it turned out great, however the ceiling seems more tricky to drag it evenly. I am a little nervous about it. Is it possible to slightly sand the bumps down with worn out sandpaper? I tried it on the sample and it seemed ok. Thats probably more time consuming though.
Allow the mud to dry a little longer when working on the ceiling. Gravity will be fighting you so you want to make sure the knockdown will hold its position when you knock it down. Yes, you could lightly sand it. However, use a brown paper bag and go really gently.

Yes, it will work on the ceiling. You’ll probably want to make the mix a little thicker so it doesn’t all drip down on the floor. Then, use the knockdown knife or a dry roller to flatten it out a little bit. It will be a process, but I think it will be better than the spray cans. You’d need dozens of those cans where with this method you’ll probably only need a 5 gallon bucket of mud. Let it dry for 24 hours after your first coat. Then, look at it to see if you want to add another coat for more texture. It’s personal preference. Let it dry for at least 24 hours before you paint it.

It looks like the old texture was orange peel and then the new texture is knock-down? Those are two different textures, wouldn't think it would look similar at all next to each other.
This is technically knocking down texture.. but this is not true knockdown texture. Just so people looking don't get confused. The picture you showed you are trying to match is called orange peal. You spray it in and walk away. Done. Knockdown gets spayed then come back and flattening begins.

Here in the midwest we use a hopper to spray it on...Let dry a little bit and knock it down with trowel...

I’d probably stick with using regular mud.
Adding extra water to “hot” mud may cause issues with the composition and effect the outcome.

I would still tape the seams and sand lightly. But your sanding doesn’t need to be absolutely perfect.
