Description
We serve meals prepared from across the Indian Ocean rim foods, spices and flavours. The use of coconut milk or cream is central to these dishes The foods include maize, rice wheat, red kidney beans, polo, mutton, chicken, and beef. The spices include garlic, black pepper, cinnamon, cardamom, onions. Flavours include saffron, rose etc.
The Indian ocean rim includes the coastal areas of India, Pakistan, Iran, Oman, UAE, Yemen and the Swahili coast on the Eastern continental shelf of Africa which had the Swahili City States from Kismayu in Somalia to Lamu, Malindi and Mombasa in Kenya, Tanga Dar es Salaam, Pemba Zanzibar in Tanzania to Kilwa, Sofala in Mozambique. These areas have a rich coastal history where these dishes evolved including Arab, Persian, Indian traders and settlers over a thousand years, plus the colonial powers like the British and Portuguese.. All this influenced the culture and diets of the Swahili Coast and the people including g person of Iranian origin like the Shirazi, the Arabs both from Hadhramut in Yemen and Oman and the Indians.
