This type of filler allows you to equalize the bottle to whatever pressure the keg is at prior to filling so the keg can remain at constant pressure.

One accessory I recommend for those filling off a tower is the extension tube.
The one I have is far to slow it takes 7 minutes to fill a 550m bottle..
