Nice video Erwan... a little tip for next time, if you take the total volume of sliced onions divide into 3 equal amounts then saute in 3 steps... The first amount til translucent, then second amount in, when the first amount is slightly beyond golden then throw in last amount til a little beyond golden... What happens is, you are developing three different levels of caramelization which gives your onion soup 3 distinct "sweetness levels" adding more depth of flavor... I liked the idea of adding Cognac, in the past I've used Cream Sherry and a little Worcestershire to taste... You have to remove the root part. If you're planning to mince it, you just have to make sure you don't get too close to the root part. I've seen lots of methods on how to do it coz it used to be such a hassle when I'm prepping and suddenly tearing up. I can barely open my eyes. I've tried washing it in running water, cutting near a heat source, microwaving it, chilling it but this trick (not cutting the root part) seemed the most convenient way.
I have a suggestion for any of you that love the roasted onions that we learned in this video like I do. That amazing liquid at the bottom, is so good to make stuffing/dressing if you are a fan of stuffing not cooked in the bird like I am...
