Yoo He Jin is not all sweetness and nicey nicey. I found her character unwilling to accept responsibility for her actions or decisions. Regardless of being sick, she felt she could abruptly drop out of someone's life for three years and come back to pick up exactly where she left off! She uses Henry while trying to win Jin Hyun. She has no strength on her own, expecting men to rescue her...using sympathy as a tool to keep these men around her. Sam Soon has always stood on her own... even if weakened by the betrayal of the men she loves!

I didn't like how she used her illness to manipulate those around her (Though she is not the only one who is manipulative; Samshik is also just as bad with using Samsoon to hurt Heejin. Samsoon was awkwardly stuck in the middle and is the most honest out of the three). The "no contact for 3 years and expecting to pick back up from before" was absolutely ridiculous. How could anyone in their right mind not think that the other person would have a life of their own and would've naturally moved on by then? It wouldn't matter because things wouldn't be the same. Feelings can change, and past memories are not enough to sustain love (a theme that is explored in the drama) Heejin was weak both physically and emotionally, and makes a great foil to the resilient and strong Samsoon. Like you said, Samsoon is refreshing because no matter how many times she gets knocked down and hurt, she gets back up. The dynamic between the two women works wonderfully because they are polar opposites; the only thing they share in common is the name "Heejin" (The name that Samsoon desperately wanted before learning to accept herself). I never liked Yoo Heejin in the drama, but I think she is a well written character. She personifies the past that Samshik has to face and reconcile with to finally live in the present. My Name is Kim Sam Soon is a modern masterpiece of kdrama and its narrative still holds up even after all these years. Still watchable and still gets me laughing like a nutcase.
