    If there's one thing I've learned as a chef on my worldly travels, Istanbul has some of the best tasting meat restaurants, bars, cafes, BBQs on this planet.
    While their cooking techniques vary somewhat to other areas of the world, at the end of the day it all comes down to taste, texture & quality. The Turk's have this down to a fine art. ❤️❤️❤️❤️

      those are not Turkish, they might be in Istanbul but they are foreigners. .So why bother all the way go to Turkey and instead of eating proper Turkish kebaps, eat American BBQ from Syrians, and i bet it is not good at all.

    complete video, from beginning until finish. High pressure manual oven, cooked in very long time. Basic technology almost the same as tandoori system. Meat 🥩 creamy inside and outside. Very unique techniques. I should try one day. InshaAllah.

    The brisket is well cooked. But I like the combination of mashed potato, and mustard? and BBQ beef. It needs to be served with corn bread, coleslaw, black eyed peas and BBQ sauce and a steamed bread roll.

    Okay, some Americans in the comments say it's not how they prefer their beef, that it looks too soft, and the fact that the restaurant seems to present itself with a reference to American culture might give these people right to say so, Texans know Texan dishes better,
    BUT I WOULD LOOOOOVE TO CHECK THAT OUT, it looks AMAAAAAZING, and the fact beef looks soft is what I actually find potentially super delicious!

    using mustard in the sauce is more of a Carolina thing.....but a great job, my friend. Would love to try some, forget any neigh sayers....part of BBQ is making it your own. You have definitely, done that....keep smokin.

    It's hard to judge this on looks alone but it seems so tender that I feel like it wouldn't have that *bite* that you look for in good Barbeque, but with how much love and attention is shown to the meat it must be damn good.

    I love the beef ribs smoked! It is better to eat the meat without all those sauces, spices & herbs that the chef is mixing with the meat. At about $35 a kilo its not cheap for Istanbul! I must try this restaurant on my next Turkey trip!

      The restaurant does not claim to be a Texas style BBQjoint. They seem to be successful servng 500 Kg ot meat per day.

      No, nothing like barbacoa. The process, is completely different. Barbacoa does not add sauce, and it isn’t beef, and it’s cooked under the ground.

    I was very impressed with the preparation and attention to detail. Beef was well marinated before putting in foil.
    However, last 2 minutes of this video has been a total nightmare. You have treated the beef with total disrespect when you mush it with garlic, chimichurri and mustard. You totally spoilt the taste of well cooked beef. Also the beef was over cooked.
    Don’t go through the effort of cooking and preparation and then offend that animal, please. The garnish is called a ‘side’ for a reason.

    Not exactly Texas style but looks good nonetheless. Texas primarily uses aged wood as the fuel source. Low and slow method. Central Texas (capital of TX BBQ) specifically uses Post Oak wood. They also tend to put on a dry rub on meats, simply consisting of salt and pepper. You can choose to use a Texas Crutch (method of wrapping meat to finish smoking), or not.

    1. This is no breast, it is shoulder with the scapula teleasing from meat.
    2. It is cooked long time 4-6h at low heat 100-120°
    No big deal.

    now halfway through the video those look like beef ribs the first one’s did not, does anyone fill differently about the first ones also

      That's Lamb shoulder or more accurate half a shoulder without the neck part and its a delicious piece to bbq/smoke. the rest is lamb shanks , lamb head, beef ribs and the smaller pieces I didn't recognize.
