Hi from Brittany. 600 million years ago there was a strong volcanic activity (oldest in Europe). 300 million years ago in Brittany, the altitude was estimated at 8000m (26,246 ft or 4.97 miles). This is why we find lots of different rocks there (granite, schist, ...).
The castle you see in Cap Fréhel is "Fort La Latte". Very nice castle, with an amazing keep at its center, and in fact worldwide famous because it was used in the 1958 movie "The Vikings", with Kirk Douglas and Tony Curtis. In fact, the final duel took place on the stone roof of the keep, which resulted in an iconic and breathtaking scene with this magnificent natural panorama.

Concerning Mont Saint Michel, initially there was this rocky promontory in the middle of the bay, it was already remarkable in itself. Then a small chapel was built there more than 1000 years ago, then the monks rebuilt larger, traders and other artisans came to settle on the mountain which, due to its exceptional location, was naturally protected from British attacks. Mont Saint Michel has never been conquered. If you know the Lord of the Rings, here is an anecdote: JRR Tolkien was inspired by Mont Saint Michel to imagine his Minas Tirith.
You must understand how towns survived from roman times to nowadays specially during middle ages. Most of the times there was no urban maintenance so rubbish was thrown into the streets so that when the level became too high people rebuilt a floor on top which became the ground floor and the old one a cellar. I know some old houses with 3 or 4 levels of cellars if you see what I mean sometimes you can tell what period belongs a level by the style of its architecture.

Standing stones (Menhirs) aren't cemeteries, but the dolmens yes, were tombs, usually covered with earth to build a cumulus (artificial small hill).

A lot of cities were destroyed during WW2 bombardments, like Lorient for exemple, so quite a lot was lost and rebuild after that

St Malo isn't situated on the English channel, it's situated on La Manche. Brits don't get that half of their channel is actually French.
