▶Ingredients:
Yield: ~18 sandwich cookies (5cm diameter)
Thai Tea Cookies
180g (1⅓ cup + 2½ tsp.) all purpose flour
pinch salt
20g (2⅔ tbsp.) cornstarch
6g (1 tbsp.) thai tea
50g (¼ cup) sugar
113g (½ cup) butter, softened
10g (2 tsp.) vanilla
35g egg, beaten
Salted Caramel
50g (¼ cup) sugar
50g (3⅓ tbsp.) cream
10g (2 tsp.) butter
1/6 tsp. salt
3g (1/2 tsp.) vanilla
Thai Tea Buttercream
80g (⅓ cup) hot milk
6g (1 tbsp.) thai tea
3 yolks
35g (2⅔ tbsp.) granulated sugar
113g (½ cup) unsalted butter, softened
5g (1 tsp.) vanilla extract - Хобби

They look super good! I want to try making it but can I ask a few questions?
1. I don’t have blender, is it possible to use matcha powder or kinako powder instead? (I do have Thai tea leaves though)
2. What does cornstarch do here? I don’t really see cornstarch in cookies recipe

Hello! I'm not very familiar using kinako powder in cookies, but matcha would definitely work! You may need to reduce the amount of matcha if used for the buttercream. As for cornstarch - they help the cookies maintain shape during baking. Hope that helps, lemme know if you got more questions!

Where did you get the Thai Tea, and is the tea leaves itself and can we used brew of the tea in recipe
Hello there! I got mine from a local shop. I use ChaTraMue Brand Thai Tea which you can likely buy online.
will the buttercream melt in room temperature?
The buttercream still holds its shape at room temperature but does get very soft. I recommend storing them inside an airtight container in the fridge.
